Sushi Hyun is a Michelin-starred Japanese omakase restaurant located in downtown Vancouver.

We are dedicated to traditional Japanese culinary techniques, exceptional seasonal ingredients, and creating thoughtful, memorable dining experiences for our guests.

Qualifications and qualities

- Previous professional kitchen experience, preferably in traditional Japanese cuisine, sushi, or fine dining.
- Familiarity with Japanese ingredients, seafood preparation, and traditional cooking techniques.
- Experience with Japanese fish preparation,



including oroshi (whole fish breakdown), is highly preferred.
- Strong attention to detail, cleanliness, and organization.
- A positive attitude and the ability to work effectively within a small team.
- Reliability, responsibility, and pride in one’s work.
- A humble, respectful attitude and a genuine willingness to learn.
- The ability to take initiative and maintain high standards consistently.

Responsibilities
- Assist with daily preparation for our omakase service.
- Handle and prepare premium seafood and seasonal Japanese ingredients.
- Support the chef with traditional Japanese cooking techniques.
- Maintain exceptional standards of cleanliness, food safety, and organization.
- Collaborate with the team to ensure smooth and consistent service.
- Take initiative and continuously work toward improving culinary skills.
