Position Summary

We are seeking an experienced Chicken Leg Boner to join our production team. The successful candidate must have hands-on experience deboning whole chicken legs with the thigh attached, separating the meat from the bone efficiently while maintaining good product yield and quality.

This position involves working in a food-processing environment and requires strong knife skills, attention to detail, and the ability to maintain consistent production rates while following food safety and sanitation requirements.

Key Responsibilities

- Debone full chicken legs consisting of the thigh and drumstick attached.
- Accurately remove bones while minimizing meat loss and maintaining maximum product yield.
- Separate meat from the femur, drumstick bones, and other bone/cartilage as required.
- Maintain consistent product specifications, including meat quality and trimming requirements.
- Remove cartilage, bone fragments, and other unwanted material according to production specifications.
- Inspect deboned chicken for remaining bone fragments and ensure product meets quality requirements.
- Maintain a steady production rate while ensuring proper workmanship.
- Use knives and other approved cutting tools safely and correctly.
- Maintain proper personal hygiene and follow GMP requirements.
- Follow all food safety, HACCP, SQF, and company procedures.




- Prevent cross-contamination by following proper handling and sanitation practices.
- Maintain a clean and organized workstation.
- Follow established procedures for handling product, waste, and rework.
- Report product quality issues, equipment problems, or food safety concerns to the supervisor.
- Perform other production duties as assigned.

Mandatory Qualifications Applicants must have previous experience deboning full chicken legs with the thigh attached.

The successful candidate must be able to demonstrate:

- Proven experience deboning whole chicken leg quarters / attached thigh and drumstick portions.
- Strong and efficient knife skills.
- Ability to remove bones while maintaining high meat recovery/yield.
- Ability to identify and remove remaining bone, cartilage, and unwanted material.
- Experience working with raw poultry in a commercial food-processing environment is strongly preferred.
- Ability to work efficiently in a fast-paced production environment.
- Ability to stand for extended periods and perform repetitive cutting motions.
- Ability to follow food safety, sanitation, and workplace safety procedures.

Required Experience Minimum 1 year of commercial poultry deboning experience preferred.





Experience specifically involving chicken leg/thigh deboning is required. Experience limited to general poultry cutting, trimming, or processing without leg deboning experience may not meet the requirements of this position.

Working Conditions
- Work is performed in a refrigerated food-processing environment.
- Frequent standing and repetitive hand/arm movements are required.
- Regular use of knives and other food-processing equipment.
- Must follow company PPE, hygiene, sanitation, and safety requirements.
- Work may involve handling raw poultry and exposure to cold temperatures.

Food Safety Responsibilities The employee is responsible for:
- Following all company food safety and sanitation procedures.
- Following GMP, HACCP, SQF, and applicable regulatory requirements.
- Reporting any food safety hazards, contamination, foreign material, or product-quality concerns immediately.
- Following proper handwashing, PPE, and personal hygiene requirements.
- Preventing cross-contamination during product handling.
- Maintaining a clean and sanitary work area.
