The Pastry Cook is responsible for creating exceptional, high-quality baked goods and desserts that align with the restaurant’s culinary standards and food philosophy. This role involves preparing and plating desserts, pastries, breads, and other baked goods with attention to detail, consistency, and creativity.
The Pastry
Cook ensures that every item meets Pearle's standards of excellence, contributing to an outstanding dining experience. This position plays a key part in exceeding guest expectations and adding a unique, flavorful touch to the restaurant’s offerings
Ideal Candidate A highly skilled baker with a passion for creating beautifully crafted desserts and baked goods in an upscale restaurant workplace. They should possess strong technical skills in pastry preparation, an eye for detail, and creativity to enhance the menu. The ideal candidate thrives in a fast-paced kitchen, works well under pressure, and has a commitment to maintaining high standards of cleanliness, organization, and food safety.
Key Accountabilities
- Responsible for the preparation of high-quality, delicious breads, pastries, and other baked items, ensuring consistency in taste, texture, and presentation.
- Adhere to execution excellence, maintaining the highest standards for baking and dessert preparation.
- Arrive promptly to work, in full uniform, prepared with all necessary tools for the job.
- Ensure the baking station is properly prepared with all mise en place complete and organized for the upcoming service.
- Maintain and organize the station throughout the shift, prioritizing cleanliness and working efficiently.
- Ensure proper temperatures are consistently used through appropriate timing, storage, and preparation techniques.
- Use correct portion sizes and established recipes consistently to minimize waste and manage costs effectively.
- Thoughtfully rotate inventory, checking par levels for freshness, and regularly performing product temperature checks.
- Accommodate special requests, dietary restrictions, and allergies while adhering to established guidelines.
- Follow cleaning schedules and always use proper food handling and safety procedures.
- Operate all equipment safely, ensuring it is in good working order and reporting any deficiencies promptly.
- Participate in product ordering and inventory management to ensure a consistent supply of necessary ingredients.
- Manage time effectively to maintain efficiency and meet service demands.
- Ensure compliance with all applicable laws, regulations, and company policies.
- Demonstrate a sense of urgency during peak periods while remaining poised and seek additional tasks during slower periods.
- Accept instruction and direction well, using feedback to make real improvements.
- Exhibit a positive, optimistic, and upbeat personality toward guests, suppliers, vendors, and team members.
- Maintain positive relationships within the team and with other departments, contributing to the success of the property.
- Additional Duties: In addition to the accountabilities listed above, there may be other duties as assigned by your manager. These duties may vary slightly depending on the property.
What we would like you to bring to the position:
- 3+ years of upscale culinary experience is an asset
- Some experience in the production of chocolates and confections an asset
- Experience working in an upscale hotel is an asset
- Ability to mix, make-up, proof and bake various lean and rich leavened products
- Strong understanding and skillset in the realm of laminated dough preferred
- Strong understanding of daily production needs and working within a budget for food costs and labour
- Strong organizational skills and demonstrated ability to multitask and prioritize tasks
