JOB SUMMARY The Banquet Server is responsible for setting up a variety of functions i.e. dinners, weddings and conferences; serving these functions and cleaning up and the storage of equipment afterwards.
QUALIFICATION STANDARDS
Education and Experience
- Some serving experience in either restaurants or banquet facilities is preferable
- Proserve certification is required
- If bartending, must have a minimum of 6 months experience, behind a bar, mixing and serving alcoholic beverages
Physical Requirements
- Must be able to lift and move tables, chairs, other pieces of furniture and service trays more than 30lbs
- Must be able to work, standing up for long periods of time
Job Knowledge, Skill and Ability
- Must be able to balance trays of food and glasses throughout crowded rooms
- Must be able to read and speak English, so you can communicate with other employees and guests
- Knows and uses “Suggestive Selling” techniques when possible i.e. wine sales
- If bartending, must be able to make a variety of alcoholic and non-alcoholic beverages, with ingredients found behind the function bar. Able to suggest and upsell cocktails to guests
- Be adept at cash handling, with basic mathematic skills necessary to calculate drink totals and change requirements
- Able to set up in-house A/V equipment and tear down
DUTIES AND FUNCTIONS
- Must be punctual
- Must adhere to hotel grooming standards, and present themselves at the beginning of each shift in a clean and pressed uniform
- Reads and interprets a BEO or setup sheets to ensure proper setup
- Sets tables in assigned area correctly and uniformly using clean, pressed linen (without rips, stains or tears); cleans silverware; cleans glassware and ensures china has no chips or cracks. Properly cleans and fills table condiments i.e. salt, pepper, sugar, breadbaskets etc
- Keeps station neat and clean during service. Constantly patrols assigned station, refilling water, wine etc, removing service items and condiments per established policies and procedures
- Uses proper in-room clearing and aisle tray break-down procedures
- Returns all reusable table condiments to be cleaned and filled
- Assists in setting-up and breaking down buffet or other special food service tables and equipment
- Sets-up, serves, and/or breaks-down coffee stations, receptions, and other special functions as assigned, following hotel policies and procedures
- Sets-up, tends, and breaks-down banquet bars, as assigned, according to hotel policies and procedures
- Greets and serves guests with above average customer service according to hotel policies and procedures
- Able to work any shifts including weekends
