Set up and stock the cooking station, portion ingredients and follow house recipes so dishes areprepared consistently for each service. Use the grill, fryer, oven and stovetop to cook menu items, and monitor cooking times,temperatures, food quality and presentation. Estimate food and ingredient requirements for scheduled service, portion food properly and helpcontrol kitchen waste. Monitor food, kitchen supplies and equipment on hand, keep basic inventory records and advisewhen items need to be reordered. Receive, label,



rotate and store ingredients and supplies following the kitchen's food safety andstorage procedures. Keep cooking equipment, preparation surfaces and kitchen work areas clean and organizedthroughout the shift.
