Position: Early Morning Baker

Schedule: Monday–Friday, approximately 3:00 AM – 9:00 AM

Hours: Approximately 30 hours per week

Compensation: $20 - $22 /hour starting wage + pooled tips averaging approximately $7–$8/hour.

Estimated total earnings of $27–$29/hour, based on historical tip averages. Tips vary with sales and are not guaranteed. Wage review following the initial training period.

About Us

Jessie's Bakery & Café is a locally owned bakery specializing in freshly baked cinnamon buns, kolache, focaccia, cookies, croissants, pastries and artisan sandwiches.

We are seeking an experienced, highly dependable and self-motivated baker to independently manage our early-morning bakery production.

This is a hands-on position in a small, fast-paced commercial kitchen. The successful candidate must be organized, physically capable of performing demanding bakery work, and confident working independently without constant supervision.

We are looking for someone who takes ownership of their responsibilities, follows recipes accurately, and consistently produces high-quality products while minimizing unnecessary waste.

Key Responsibilities

- Independently manage early-morning bakery production and bake-off.
- Prepare, shape, proof and bake cinnamon buns, kolache, focaccia, croissants, cookies and other bakery products.
- Mix and prepare yeast doughs according to standardized recipes and production requirements.
- Coordinate multiple products, proofing times, oven temperatures and baking schedules simultaneously.
- Follow daily production targets and ensure bakery products are ready before opening.
- Operate commercial mixers, convection ovens, proofers and other bakery equipment safely.
- Accurately measure ingredients and follow recipes without unauthorized substitutions.
- Monitor product quality,



consistency and proper baking temperatures.
- Minimize unnecessary waste through proper planning, accurate measurements and careful production.
- Immediately report production errors, damaged products, ingredient shortages and equipment concerns.
- Record product waste accurately according to company procedures.
- Properly label, date, store and rotate ingredients and finished products.
- Maintain a clean, organized and sanitary workspace.
- Complete assigned tasks efficiently, accurately and independently.

Qualifications & Requirements

Required:

- Experience preparing bread and cookie doughs
- Experience operating commercial convection ovens, planetary mixers, dough sheeters and proofing cabinets.
- Food safety certification.
- Excellent reliability, punctuality and attendance.
- Reliable transportation and the ability to consistently arrive for 3:00 AM shifts, including during Fort McMurray winter conditions.
- Ability to work independently with minimal supervision.
- Physical ability to perform demanding bakery work, including prolonged standing, bending, repetitive movements and safely lifting up to 20 kg (44 lb)
- Strong organizational and time-management skills.
- Excellent attention to detail and commitment to food safety.
- Ability to follow written recipes and production instructions accurately.
- Legal eligibility to work the required early-morning schedule.
