Job Overview
Green Coast Catering Ltd., an established year-round food truck and catering company, is seeking an experienced Kitchen Production Manager / Sous Chef to lead our Bavarian Rotisserie Co. operation at the Langley Christmas Village.

This is an exciting opportunity for an experienced sous chef, kitchen supervisor, or senior cook who enjoys high-volume food production, hands-on leadership, and working in a fast-paced environment.
Our brand-new, purpose-built Bavarian Rotisserie Co. features three large cathedral-style rotisserie ovens, with a production system designed to serve up to 200 covers per hour.
Our specialty is traditional Bavarian roasted pork hocks, prepared using a carefully developed two-stage cooking process.
You’ll be responsible for overseeing the kitchen team, coordinating production, maintaining food quality, and ensuring smooth, efficient service during busy market periods.
This is a hands-on leadership position. We’re looking for someone who can confidently manage a busy kitchen while working alongside their team.

Key Responsibilities

Kitchen Production & Service
● Oversee daily pork hock production, including oven and rotisserie cooking cycles.
● Coordinate production timing to maintain consistent product availability during peak periods.
● Anticipate demand, prevent production bottlenecks, and maximize customer throughput.
● Maintain high standards of food quality, consistency, and presentation.
● Monitor cooking temperatures, hot holding, and food safety procedures.
● Work hands-on alongside the kitchen team during busy service periods.

Team Leadership
● Supervise, train, and support cooks and food service employees.
● Assign responsibilities and coordinate staff across cooking, preparation, cutting, and service stations.
● Maintain a positive, organized,

and productive working environment.
● Ensure staff follow established operating procedures and food safety standards.
● Identify operational challenges and resolve them efficiently.
● Communicate regularly with ownership and the management team.
Inventory & Operations
● Monitor daily inventory and coordinate product replenishment.
● Minimize waste while ensuring sufficient product is available for service.
● Oversee opening and closing procedures.
● Maintain cleanliness, sanitation, and proper equipment operation.
● Ensure compliance with food safety requirements and company procedures.
● Assist with receiving deliveries and organizing stock.

Our ownership and management team handles employee scheduling and provides operational support. We also have access to a fully equipped commissary kitchen located approximately five minutes from the market, making inventory replenishment and additional preparation convenient.
This position is primarily focused on onsite kitchen operations, with minimal offsite management responsibilities.

Qualifications & Experience

Required:
● Experience in a professional commercial kitchen, preferably as a sous chef, kitchen supervisor, kitchen manager, or senior line cook.
● Previous experience supervising or leading kitchen staff.
● Strong understanding of high-volume food production and commercial cooking equipment.
● Excellent organizational skills and the ability to anticipate production requirements.
● Strong knowledge of food safety, sanitation, and temperature control.
● Ability to remain calm and organized during busy service periods.
● Strong communication, problem-solving, and leadership skills.
● Willingness to work hands-on alongside the team.
● Reliable transportation to Langley.
● Availability for evening and weekend shifts throughout the Christmas market.
Considered an Asset:

● Experience with rotisserie cooking, roasting, or large-scale meat production.
● Experience in banquet kitchens, catering, festivals, or other high-volume food operations.
● FOODSAFE Level 1 or equivalent certification.
● Experience managing production schedules and kitchen inventory.
Formal culinary qualifications are not required. We value practical experience, leadership ability, reliability, and a positive attitude.

We offer competitive compensation and a supportive working environment.
● $28–$35/hour, depending on experience.
● Shared employee tip pool with a guaranteed minimum of $7/hour in tips, with the potential to earn more.
● Minimum combined compensation of $35–$42/hour, before overtime.
● Paid overtime.
● Regular payroll employment — not an independent contractor position.
● Vacation pay in accordance with BC employment standards.

● A lively European-style Christmas market atmosphere.
● Potential for ongoing employment with our established, year-round catering and food truck business.
