French 50 Bakery is open 7 days a week located at 10 Elma Street W Okotoks. We are family owned and have a goal to make bread better for people who've never experienced naturally made old school baked goods. We provide artisan loaves and pastries to our clientele.

The Night Baker is responsible for baking off all pastries, breads, and loaves for the following day’s service. This includes filling, finishing, and quality-checking baked goods, managing proofed doughs, and ensuring the bakery is clean and compliant with all food safety and sanitation standards. The Night Baker plays a critical role in ensuring product consistency and readiness before the morning team arrives.

Key Responsibilities:

- Bake pastries, bread, and viennoiserie products according to production lists and standards
- Finish and fill baked items (e.g., glazing, dusting, cream or jam filling) as required
- Monitor baking times and temperatures to ensure consistent product quality




- Organize and rotate proofed doughs and manage oven schedules
- Label, store, and prepare baked items for packaging or display
- Maintain a clean and organized baking area, including equipment and surfaces
- Follow all food safety, health, and sanitation protocols
- Document waste, report any discrepancies in product or baking issues
- Communicate with Bake Lead regarding any shortages, issues, or improvements
- Lock up and secure bakery equipment and space at end of shift if applicable

Qualifications:

- Experience in a commercial bakery or professional baking environment preferred
- Strong knowledge of baking techniques, timing, and dough handling
- Ability to work independently during overnight shifts
- Solid attention to detail and consistency

Job Type: Full-time

Pay: $15.00-$18.00 per hour
