Tasks Cut beef, lamb, pork or veal carcasses or sides or quarters of carcasses into primal cuts for further cutting, processing, or packaging. Cut meat and poultry into specific cuts for institutional, commercial, or other wholesale use. Remove bones from meat. Additional information
