This is a hands-on production position ideal for someone with strong professional baking experience, particularly with laminated doughs, croissants, pain au chocolat and other breakfast pastries and baked goods.

The successful candidate should be comfortable working independently when required and must be flexible to work morning, afternoon/evening or overnight shifts, depending on production and operational needs.

Duties Include (but are not limited to):

- Prepare and bake daily pastry and bakery items for Banff Park Lodge operations.

- Produce a variety of bakery and pastry items including breakfast pastries, muffins, cookies, loaves, bars, cakes and other products according to business needs.
- Follow standardized recipes, portion sizes, production specifications and presentation standards.
- Complete daily production according to established prep lists, par levels and service deadlines.
- Monitor proofing, baking temperatures and production timing to ensure products are available when required.
- Prepare items for the following day's production, particularly when working overnight or early-morning shifts.
- Maintain proper product rotation, labeling, dating and storage.
- Monitor ingredient and finished-product levels and communicate shortages or production concerns to culinary leadership.
- Minimize waste and overproduction through accurate preparation, portion control and proper handling of ingredients.
- Maintain a clean, organized and safe bakery/pastry work area.
- Properly clean and maintain bakery equipment including mixers, sheeters, ovens, proofers, worktables and small equipment.
- Follow all food-safety, sanitation, allergen-awareness and workplace-safety requirements.
- Work collaboratively with the Pastry Chef, Executive Chef, Sous Chefs and other members of the culinary team.

- Assist with pastry production for restaurants, banquets, special events and seasonal functions when required.
- Perform other bakery and pastry duties according to operational requirements.

Ideal candidate:

- Previous professional baking or pastry experience in a bakery, hotel, resort, restaurant or similar production environment.
- Strong experience working with baking is highly preferred.
- Demonstrated ability to produce quality croissants, pain au chocolat and similar laminated products.
- Good understanding of dough fermentation, proofing, temperature control and baking techniques.
- Ability to follow standardized recipes accurately and consistently.
- Comfortable using professional bakery equipment, including mixers and dough sheeters.
- Strong organizational and time-management skills.
- Ability to organize production and work independently, particularly during overnight or early-morning shifts.
- Good understanding of food safety, sanitation, allergen awareness, product rotation and safe food handling.
- Ability to maintain consistent quality while handling higher-volume production.
- Reliable, punctual and able to meet daily production deadlines.
- Flexible availability, including AM, PM, overnight, weekend and statutory-holiday shifts as required.

Experience (Preferred):

- 3+ years of qualified bakery or pastry experience.
- Previous experience producing laminated pastries in a commercial bakery, pastry kitchen, hotel or similar environment.
- Experience with high-volume production is an asset.
