Head Chef / Kitchen Manager – Duck Mountain Lodge
Full-time · Permanent · Year-round · $25.00+/hour, depending on experience · Accommodations provided
About Us
Duck Mountain Lodge sat empty for 9 years. We brought it back to life in 2024, and we're now open year-round with a restaurant, lounge, cafe and 15 guest rooms. Our guests are work crews, snowmobilers, cottagers and families who've been coming to the park for generations. We cook real food from scratch: hand-cut steaks, Sunday buffet, pickerel, homemade pizza and weekly specials. Now we need a chef who can take the kitchen and own it.
We're on Madge Lake in Duck Mountain Provincial Park. On your days off you've got the golf course, hiking and biking trails and the beach in summer, and cross-country skiing, downhill skiing and snowmobile trails right outside the door in winter.
The Role
This is not a line cook job. You'll run the kitchen from top to bottom: lead the team, keep it clean and organized, control costs, and put out food guests drive in for.
What You'll Do
- Run the kitchen day to day and be the leader your cooks look to
- Order product, manage inventory, rotate stock and work with suppliers (Sysco)
- Create weekly specials and design new menu items
- Cost recipes and plates, and hit food cost targets
- Keep waste down and track it
- Set and enforce prep lists, recipes and portion standards so every plate is consistent
- Train, coach and supervise kitchen staff, and help build the kitchen schedule
- Keep the kitchen spotless and organized: cleaning schedules, labeling, dating and proper storage
- Make sure we're always ready for a health inspection
- Handle allergies and gluten-free orders safely (we take these seriously)
- Run buffets, holiday dinners, group bookings and events
- Maintain equipment and report repairs before they become problems
What You Need
- 15+ years of professional kitchen experience
- Proven experience as a Head Chef, Kitchen Manager or Sous Chef running a kitchen
- Strong leadership skills. You lead by example and keep the team accountable
- Ordering, inventory and food costing experience
- Creativity with specials and menu design
- A clean, organized way of working, every shift
- Food Safety certification (or willing to get it before starting)
- Solid knowledge of allergens and cross-contamination
- Reliable and self-motivated. You show up, and you don't need to be chased
- Able to work evenings, weekends and holidays
- Able to stand for long shifts and lift up to 50 lbs
- Must be legally entitled to work in Canada. We are unable to provide LMIA or any immigration or work permit support.
Nice to Have
- Red Seal certification
- Experience in a lodge, resort or rural restaurant
- Butchery and scratch-cooking skills (sauces, soups, baking, sourdough)
- Valid driver's licence and your own vehicle (we're in a provincial park)
Schedule
- Full-time, around 40 hours a week
- Closed Mondays
- Evenings, weekends and holidays required
Accommodations
On-site accommodations are provided.
