Carlino, a Michelin-recommended Italian restaurant inspired by the rustic cuisine of Friuli, invites passionate and technically skilled cooks to join our team as First Cook – Garde Manger.

This is not a training position. It is a role for a professional who thrives on precision, artistry, and the quiet discipline that defines a truly world-class kitchen. At Carlino, the garde manger station is the heartbeat of refinement — where cool discipline meets creative expression. Every plate reflects balance, restraint, and deep respect for Italian tradition and Pacific Northwest ingredients.

You’ll be responsible for executing some of the most visually intricate and flavour-layered dishes in the kitchen — from crudo and composed salads to delicate antipasti and amuse bouche for Michelin-level service. You’ll work alongside a team that values mentorship, consistency, and excellence — cooks who take pride in the smallest details, knowing that every gesture contributes to the guest experience.

Qualifications and Key Attributes:

- Minimum 3-year previous experience in a similar role (experience with Italian cuisine is an asset)
- Strong work ethic and high standards for quality
- Team player who builds trust with colleagues and can be relied upon for their honesty and integrity
