We are looking for a motivated and reliable Sushi Chef to join our team. The ideal candidate has a passion for Japanese cuisine, robust attention to detail, and takes pride in maintaining high standards of food quality and presentation.

Responsibilities

•⁠ ⁠Prepare and serve nigiri, sashimi, maki rolls, and other sushi dishes according to company standards.
•⁠ ⁠Perform fish butchery, including cleaning, breaking down, portioning, and properly storing various types of fish.
•⁠ ⁠Maintain consistency in portion size, presentation, quality, and taste.
•⁠ ⁠Take ownership of the sushi station, including daily prep, organization, cleanliness, and setup.
•⁠ ⁠Monitor and maintain appropriate prep and par levels to ensure the station is ready for service.
•⁠ ⁠Communicate inventory, prep levels, shortages, product quality, and other station needs directly to the Chef.
•⁠ ⁠Properly label, rotate, and store products while following food-safety and sanitation procedures.
•⁠ ⁠Minimize waste through proper handling, portioning, and preparation of ingredients.
•⁠ ⁠Work efficiently during service while maintaining quality and presentation standards.




•⁠ ⁠Ensure all food leaving the sushi station meets company standards before being served to guests.
•⁠ ⁠Work collaboratively with the kitchen and front-of-house teams to provide a consistent guest experience.

Qualifications

•⁠ ⁠1+ year of sushi or Japanese kitchen experience preferred.
•⁠ ⁠Experience preparing nigiri, sashimi, maki rolls, and breaking down fish is an asset.
•⁠ ⁠Candidates with less experience are welcome to apply — we are willing to train the right person who has a strong work ethic, positive attitude, and willingness to learn.
•⁠ ⁠Strong organizational and time-management skills.
•⁠ ⁠Ability to work independently and take responsibility for a station.
•⁠ ⁠Good communication skills and the ability to follow direction and provide updates to the Chef.
•⁠ ⁠Solid understanding of cleanliness, food safety, and proper food handling.
•⁠ ⁠Able to work efficiently in a quick-paced kitchen environment.
