Schedule: Flexible schedule; early morning, evening, weekend and holiday availability may be required depending on operational needs.
Job Duties Plan, organize and oversee the day-to-day retail operations of the Sydney bakery, coordinating bakery production, retail sales and customer service activities.
Manage and coordinate the work of assistant managers, bakery clerks and bakers staff, and assign responsibilities according to staffing levels, production needs and customer demand.
Review sales results, customer demand, inventory levels and product waste to determine appropriate product availability and operational priorities.
Determine the range and quantities of bread and baked goods required for retail sale based on customer demand, sales performance and seasonal business needs.
Oversee inventory and purchasing of ingredients, packaging materials, store supplies and other items required for daily operations.
Communicate with approved suppliers regarding product availability, delivery schedules, orders and supply issues.
Determine staffing requirements and oversee employee recruitment, onboarding, training, scheduling and performance management.
Monitor labour requirements and staff scheduling to ensure appropriate coverage for bakery production, retail sales and peak customer periods.
Monitor store sales, labour usage, inventory, product waste and routine operating expenses and review results against established operational targets.




Authorize routine store expenditures within assigned authority and communicate significant financial or operational matters to the owner.
Implement local promotional and merchandising activities in accordance with company and brand requirements and monitor their effectiveness.
Establish and maintain customer service standards, resolve escalated customer complaints and make operational adjustments where recurring service issues are identified.
Ensure opening and closing procedures, cash controls, food-safety requirements, store cleanliness and workplace safety procedures are consistently followed.
Meet regularly with Assistant Managers and bakery staff to review staffing, production, inventory, equipment and customer-service issues and establish operational priorities.
Employment Requirements 5 to 8 years of experience in retail management, bakery operations, food retail, restaurant operations or a related field is required.
Completion of secondary school is required.
Previous management experience involving staff supervision and day-to-day business operations is required.
Strong leadership, organizational, communication and problem-solving skills.
Experience managing staffing, scheduling, inventory and operational priorities in a customer-facing business.
Ability to review sales and operational information and make appropriate business decisions.
Ability to manage multiple operational priorities in a fast-paced bakery environment.
Availability to work flexible hours, including weekends and holidays as required.
