Overview
We are seeking a passionate, creative, and detail-oriented Pastry Sous Chef to join the culinary team at Nadège Patisserie. This leadership role is ideal for someone who thrives in a fast-paced environment and is passionate about exceptional pastry craftsmanship, innovation, and quality. Working closely with the Executive Chef, you will help lead pastry production, maintain the highest standards of presentation and food safety, and inspire a culture of excellence across the kitchen team.
As the Pastry Sous Chef, you will play a vital role in overseeing daily production, menu development, quality assurance, and overall kitchen operations. Based primarily at our production facility, you will collaborate with culinary leadership to ensure consistency and efficiency across our pastry shops, restaurant, catering programs, and special events. Key Responsibilities
- Support the development of seasonal desserts, pastry offerings, grab-and-go products, catering items, and menu innovations.
- Test, refine, and document recipes to ensure consistency and scalability.
- Oversee daily production to maintain excellence in taste, presentation, quality, and portion control.
- Ensure products reflect Nadège’s standards and French-inspired culinary approach.

Leadership & Team Development
- Provide daily leadership, coaching, and support to pastry cooks, prep staff, and kitchen team members.
- Train employees on recipes, techniques, food safety practices, and company standards.
- Foster a positive, professional, and collaborative workplace culture.
- Assist with hiring, onboarding, scheduling, and performance management.
- Help develop future culinary talent within the organization.
Operations & Inventory Management
- Support smooth kitchen operations across multiple locations.
- Assist with inventory control, ordering, receiving, and supplier communication.
- Monitor equipment condition and coordinate repairs or maintenance when needed.
- Contribute to process improvements, kitchen organization, and operational efficiencies.
Health, Safety & Compliance
- Ensure compliance with food safety regulations, HACCP procedures, temperature logs, and sanitation standards.
- Maintain an organized and clean production environment.
- Promote safe work practices and address potential hazards proactively.
Business Support
- Assist with labour planning, scheduling, and cost control initiatives.
- Monitor food costs, ingredient usage, and waste reduction efforts.
- Participate in special events, product launches, tastings,
and promotional activities.
Qualifications
- 2 to 4 years of leadership experience in a professional kitchen.
- Experience in pastry production; experience in both production and à la carte environments is an asset.
- Familiarity with French-inspired cuisine, high-volume production, or grab-and-go programs preferred.
- Food Handler Certification required.
- Standard First Aid and CPR-C certification preferred.
- Strong understanding of food safety, sanitation, inventory management, costing, and labour efficiency.
- Excellent communication, organizational, and leadership skills.
- Ability to work effectively in a fast-paced environment and adapt to changing priorities.
Working Conditions
- Multi-site role.
- Adaptable schedule, including early mornings, evenings, weekends, and special events as required.
- Ability to lift up to 50 lbs and stand for extended periods.

Pay: $60,000.00-$65,000.00 per year
