Position: Head Sushi Chef Wage: CAD$39.00 per hour Types: Full-time, Permanent (various shifts, including evenings, weekends, and holidays) Working hours: 30- 40 hours per week Benefits: 4% vacation pay Job Duties:

- Plan and direct the preparation and cooking of sushi and other Japanese dishes; • Supervise and coordinate the activities of kitchen staff; • Plan menus and create special recipes; • Ensure sushi dishes meet high standards of quality, presentation, and consistency; • Estimate seafood, rice and other food requirements and assist in controlling food costs; • Oversee the selection, inspection and proper handling of fish and seafood to ensure freshness and quality; • Oversee the preparation of sushi rice and ensure proper texture, temperature and seasoning; • Train and mentor junior sushi cooks and kitchen staff in sushi preparation techniques; • Maintain food safety,



sanitation and hygiene standards in accordance with provincial regulations; • Prepare and present sushi and Japanese dishes, specialty dishes, chef’s specials, and customized dishes for customers with food allergies or special dietary requirements.

Job Requirements
