Prequel & Co. Apothecary is seeking an experienced and detail-oriented Kitchen Manager to lead our culinary operations and oversee the execution of our elevated French-inspired food program.

As a cocktail-forward hospitality concept, our food program is designed to complement the beverage experience through refined flavours, thoughtful presentation, and consistent execution. We are looking for a hands-on kitchen leader who can maintain high standards while effectively managing service, prep, organization, and the day-to-day operations of the kitchen.

The Role The Kitchen Manager will be responsible for leading kitchen service and ensuring that every dish is executed consistently and to standard. This position requires someone who is comfortable working in a high-volume, detail-driven cocktail bar workplace, with a strong understanding of kitchen organization, team leadership, and elevated food presentation.

Key Responsibilities

- Lead and manage kitchen service, maintaining consistency, timing, and presentation.
- Execute and oversee an elevated French-inspired food menu.
- Train, coach, and develop Line Cooks and kitchen team members.
- Maintain strong attention to plating, portioning, recipes, and quality control.
- Manage daily prep levels and ensure the kitchen is fully prepared for service.
- Coordinate ordering, receiving, inventory, and product rotation.
- Monitor food waste and support food-cost controls.
- Maintain cleanliness, organization, food safety, and sanitation standards.
- Manage opening and closing procedures and ensure proper kitchen accountability.
- Work closely with culinary leadership, management,



and the FOH team to deliver a cohesive guest experience.
- Support menu changes, tastings, events, and ongoing training.
- Maintain clear communication regarding shortages, operational issues, staffing, and prep requirements.

What We’re Looking For
- Previous experience as a Kitchen Manager, Sous Chef, Junior Sous Chef, or experienced Chef de Partie in an upscale restaurant, cocktail bar, hotel, or similar hospitality environment.
- Strong line and service experience.
- Experience with French cuisine or classical French techniques is an asset.
- Excellent attention to detail and plating standards.
- Strong organizational and time-management skills.
- Ability to lead a small team while remaining hands-on during service.
- Comfortable working in a fast-paced, late-night hospitality environment.
- Strong understanding of food safety, inventory, ordering, prep management, and kitchen cleanliness.
- Reliable, accountable, and able to communicate effectively with both BOH and FOH teams.

About the Environment Prequel & Co. Apothecary combines an immersive cocktail experience with an elevated culinary program focused on French-inspired small plates. The Kitchen Manager plays an important role in ensuring the food experience matches the same level of detail, creativity, and execution expected from the cocktail program.

We are looking for someone who takes pride in their station, understands the importance of consistency, and wants to take ownership of a kitchen while continuing to develop as a culinary leader.

Pay: $50,000.00-$60,000.00 per year
