L&C; French Bakery is looking for a reliable, experienced, and motivated Pastry Sous Chef to join our Baker Street production kitchen.

We are a small French bakery and pâtisserie in Nelson, BC, and we're looking for someone who takes pride in their work, has strong pastry skills, and is ready to take on an important leadership role within our kitchen team.

The Pastry Sous Chef will work closely with the Head Chef and will be responsible for overseeing the day-to-day pastry production team, maintaining product quality, managing production efficiently, and helping develop new products.

Position Details

- Full-time: 40 hours per week
- Schedule: Tuesday to Saturday
- Regular hours: 7:00 a.m. – 3:00 p.m.
- Days off: Sunday and Monday
- Start date: Early 2027
- Wage: $22–$25/hour, depending on experience
- Location: Baker Street, Nelson, BC
- Work location: In person

Responsibilities Team Leadership & Kitchen Management

- Lead and supervise a team of approximately 3 pastry team members
- Organize daily tasks and production priorities to ensure everything is completed on time
- Delegate responsibilities and provide guidance and support to team members
- Train team members on recipes, techniques, quality standards, and proper kitchen procedures
- Monitor team performance and ensure production timelines and quality standards are consistently met
- Ensure the team works efficiently and stays on schedule throughout the day
- Provide constructive feedback and support when improvements in technique, organization, or efficiency are needed
- Maintain clear, respectful, and effective communication with the pastry team and Head Chef
- Address day-to-day problems quickly and effectively and take initiative to find practical solutions
- Help maintain a positive, respectful, and collaborative kitchen environment

Pastry Production & Quality Control

- Be fully capable of producing all desserts, pastries, and bakery products offered at L&C; French Bakery
- Prepare and finish a wide variety of pastries, desserts, macarons, baked goods, fillings, creams, ganaches, and other pastry components
- Monitor the quality, consistency, appearance, and presentation of products throughout the day
- Conduct regular quality checks on products being sold directly to customers as well as products being prepared in the production kitchen
- Ensure all products meet L&C; French Bakery's recipes, standards, and expectations
- Identify and correct quality issues before products reach customers
- Ensure production quantities are accurate and adjusted according to daily needs
- Maintain consistent portioning, presentation, and finishing of all products
- Assist with production when needed, especially during busy periods or when additional support is required
- Ensure proper food safety, sanitation, and kitchen procedures are followed at all times

Production Planning & Ordering

- Complete and oversee daily mise en place




- Help plan and organize production for upcoming days and seasonal periods
- Place and manage ingredient, packaging, and supply orders with bakery and food-service suppliers
- Monitor inventory and ensure ingredients and supplies are available when needed
- Ensure orders are placed accurately and on time to support production needs
- Help minimize waste and ensure ingredients are used efficiently
- Ensure proper storage, labeling, and rotation of ingredients and finished products

Research & Development

- Take an active role in research and development of new desserts, pastries, and bakery products
- Develop and test new recipes and techniques in collaboration with the Head Chef
- Contribute ideas for seasonal products, limited-time offerings, and new menu items
- Test recipes for consistency, quality, efficiency, and scalability for production
- Help establish recipes, production methods, and quality standards for new products
- Stay curious about new pastry techniques, ingredients, and industry trends

Requirements

- Minimum 5 years of professional baking and pastry experience
- Previous experience as a Pastry Sous Chef, Pastry Chef, or in a similar leadership role is strongly preferred
- Strong knowledge of professional pastry production and techniques
- Must be highly skilled and efficient with a piping bag — able to pipe consistently, quickly, and neatly
- Must have professional experience making and piping macarons
- Must be capable of producing a wide range of pastries, desserts, and baked goods independently
- Strong attention to detail and high standards for product quality
- Excellent organizational and time-management skills
- Strong communication and interpersonal skills
- Fluent English is required
- Reliable, punctual, and comfortable taking responsibility for a team
- Available to work Tuesday through Saturday, starting at 7:00 a.m.
- Currently living in Nelson or the surrounding area, or willing to relocate before starting

Work Permit Candidates who already hold a valid Canadian work permit are preferred.

For the right candidate, employer-supported immigration options may be considered, including a potential LMIA, depending on eligibility and business requirements.
