This role blends culinary oversight, bar and beverage management, and daily service leadership to ensure seamless operations and exceptional guest experiences.The Food & Beverage Manager is accountable for the overall performance, profitability, and service standards of the F&B department. This includes supervising daily operations, managing staffing levels, supporting culinary execution, and ensuring compliance with company policies and regulatory requirements. The role leads by example, fosters a positive learning environment, and maintains a safe and welcoming workplace for all team members.Key AccountabilitiesProvides leadership, direction, and mentoring to both FOH and BOH teams, ensuring alignment with service and culinary standardsOversees daily operations across the restaurant, gaming floor service points, and kitchen to maintain smooth, efficient serviceManages all F&B service flow, including bar operations, food delivery, and coordination between FOH and BOHDevelops and manages departmental budgets, monitors labour, food, and beverage costs, and analyzes P&L statements to ensure profitabilityCollaborates closely with the culinary team on menu development, food quality, portion control, and BOH operational standardsReviews pricing strategies, oversees inventory procurement,
and manages vendor relationships and negotiationsDevelops Performance Objectives and delivers timely Performance Evaluations for direct reportsProvides F&B expertise to cross‐department teams and vendor partners, supporting operational decisions and guest service initiatives.Approves all department‐related POs and invoices and ensures accurate financial trackingConducts monthly inventory counts for both food and beveragePerforms regular inspections of FOH and BOH areas to ensure consistency, cleanliness, and adherence to safety standards; reports maintenance or supply needsLiaises effectively with all operational departments to support smooth casino operationsBuilds strong working relationships with guests, ownership, and team membersEnsures compliance with licensing laws, food safety, liquor regulations, health and safety standards, and other statutory requirementsManages additional initiatives and projects as requiredEducation and QualificationsMinimum 3 years of F&B leadership experience, including direct oversight of culinary/BOH operationsStrong culinary knowledge and experience managing bar and beverage serviceSolid understanding of food safety, liquor regulations, and BOH operational standardsDemonstrated ability to manage budgets, inventory,
