The Lead Hand ensures that finished products meet regulatory requirements, as well as internal and external specifications. Ensures that the production line runs smoothly. Monitoring procedures and associated documentation is completed accurately, truthfully and timely.
Hours of work: 2:00pm - 10:30pm
Occasional Saturdays required
Responsibilities
· Set up, start, operate, monitor, adjust, and shut down production and packaging equipment according to established procedures.
· Ensure machines are properly set up for the scheduled product, package size, labels format, and production requirements before the start of each run.
· Conduct and document required product weight checks at established frequencies to ensure finished products meet legal, company, and customer weight specifications.
· Monitor product quality throughout production, including appearance, texture, packaging integrity, seal quality, coding, labeling, weight, and other applicable product specifications.
· Perform required metal detector checks and verification according to established food safety procedures, including completion of all associated records and immediate reporting of any failed or abnormal checks.
· Complete all required production, quality, food safety, sanitation, traceability, and monitoring records accurately and in real time.
· Record production information including quantities produced, product weights, lot/batch information, downtime, waste, rework, changeovers, and other required information.
· Prepare brine solutions according to established formulas and procedures, including accurately measuring ingredients and verifying and recording required parameters such as concentration, temperature, pH, or other specifications where applicable.
· Monitor brine condition during production and communicate any deviations from established specifications.
· Perform required product and process checks, which may include temperature, pH, weight, concentration, and other measurements, and accurately document results.
· Immediately communicate any product, process, equipment, food safety, or quality deviations to the Lead Hand,
Production Supervisor and/or Quality Assurance.
· Stop or hold production where necessary when a food safety, quality, foreign-material, equipment, or product-integrity concern is identified and notify the appropriate supervisor.
· Perform product and packaging changeovers efficiently while following allergen controls, sanitation requirements, and established changeover procedures.
· Perform CIP (Clean-in-Place) cleaning and sanitation procedures on applicable processing equipment, tanks, lines, piping, and associated systems according to established procedures.
· Prepare and/or verify cleaning and sanitizing solutions as required and follow established chemical concentration, temperature, contact-time, and safety requirements.
· Perform manual cleaning, COP, equipment sanitation, and non-daily/deep-cleaning tasks as outlined in sanitation procedures and schedules.
· Complete all required CIP, sanitation, pre-operational, and cleaning monitoring records accurately and completely.
· Inspect equipment before start-up following cleaning and sanitation to ensure equipment is properly assembled, clean, and ready for production.
· Perform routine equipment inspections and identify abnormal machine conditions, including unusual noises, vibration, leaks, damaged components, loose fittings, or other signs of equipment malfunction.
· Perform basic troubleshooting and minor repairs/adjustments without Maintenance assistance where safe and within the Machine Operator's training and authorization. This may include clearing minor jams, adjusting sensors, guides or settings, tightening fittings, correcting alignment issues, and other basic operational adjustments.
· Escalate equipment breakdowns or mechanical concerns to Maintenance when the issue cannot be safely corrected by the Machine Operator.
· Assist Maintenance with troubleshooting by clearly communicating the problem, symptoms, error messages, and circumstances surrounding equipment failures.
· Minimize equipment downtime by identifying operational issues quickly and taking appropriate corrective action within the scope of the position.
· Monitor and minimize product waste, ingredient loss, packaging waste, rework, and unnecessary downtime during production.
· Ensure product, ingredients, packaging materials, utensils, and equipment are handled in a manner that prevents contamination or cross-contamination.
· Follow all GMPs, HACCP/SQF programs, allergen controls, food safety procedures, sanitation requirements, and company policies at all times.
· Follow proper handwashing, protective clothing, PPE, and hygienic practices required within a dairy/food manufacturing setting.
· Ensure production areas, equipment, tools, and surrounding work areas are maintained in a clean, sanitary, and organized condition throughout the shift.
· Set up and prepare equipment for the next production run or following day's production when required.
· Communicate production status, equipment concerns, outstanding cleaning requirements, quality issues, and other relevant information during shift handovers.
· Follow all company Health & Safety policies, lockout/tagout requirements, chemical handling procedures, and safe operating practices.
· Immediately report unsafe conditions, injuries, near misses, damaged equipment, chemical concerns, or other health and safety hazards to Management.
· Use required PPE and safety equipment when operating, cleaning, adjusting, or working around machinery.
· Lifting is required (upto 23kg)

Requirements
- General Food Hygiene Training
- 1-2 years experience as Lead Hand (in food)
- Experience working in food processing/manufacturing
- Asset: Cheese manufacturing experience, minimum 2 years
Job Type: Full-time Pay: $22.00-$25.00 per hour
