Lighthouse Bistro and Pub in Nanaimo, BC is a casual dining restaurant in the heart of Nanaimo, on the ocean overlooking the beautiful harbour. Trendy with a focus on quality fresh food, great drinks, and a welcoming environment.

We are looking for an experienced sous chef. This is an exciting opportunity for a dedicated experienced sous chef to come on board, help develop and lead the culinary team.

Job Responsibilities:

- Assist Chef to manage culinary team.
- Execute the menus and daily specials.
- Run the kitchen while the chef is absent
- Maintain standards for food storage, rotation, quality, and appearance.
- Ensure compliance with applicable health codes and regulations.
- Execute maintenance and cleaning schedules for equipment, storage, and work areas.
- Runs and expedites food production line or BBQ during high volume times. as required.
- Supervises, trains and works with Production Cooks, Prep Cooks




- Develops morning and evening prep lists in chefs absence to ensure preparation quantities for all meal periods
- Ensures proper procedures and company guidelines are being followed

Qualifications / Skills:

- Demonstrated knowledge of culinary techniques and practices
- Understanding of menu and recipe development techniques
- Understanding of inventory controls and menu costing

Experience Requirements:

- Formal culinary training / culinary certificate
- 8+ years cooking experience in high-volume kitchens in Canada
- 3+ years sous chef experience in restaurant / pub
- Previous menu development and chef experience will be an asset
- Food Secure or equivalent are required

Pay: $56,000.00-$60,000.00 per year
