The Retail Supervisor plays a key role in the day-to-day operations of the winery, ensuring that all aspects of service, cleanliness, staff coordination, and guest experience are executed to the highest standard. This role requires strong leadership, attention to detail, and a proactive approach to customer service and operational efficiency.
Function of the role:
Daily Responsibilities
- Guest Experience: Prioritize guest care by ensuring staff follow proper service flow. Encourage high levels of guest interaction and presence at tables.
- Reservation Management: Oversee timely seating and preparation for incoming reservations.
- Service Oversight: Monitor chit/service times, ensuring waters are dropped within 2 minutes and guests are served promptly.
- Enforce Floor Plan: Communicate and maintain the planned section assignments.
- Break Coordination: Schedule and delegate staff breaks appropriately.
- Ongoing Mis en Place: Re-check stock levels throughout the day—roll-ups, food prep, menus, and wine availability.
- Cleanliness & Presentation: Ensure retail and service spaces remain clean and welcoming throughout the day.
- Staff Morale & Communication: Regularly check in with staff, provide support, and maintain open lines of communication.
- Task Management: Create and assign to-do lists for downtime, keeping staff productive or adjusting labor as needed.
- Sales & Wine Club Performance: Communicate daily sales and wine club membership targets to the team, monitor progress throughout the day, and provide ongoing coaching and motivation to help achieve goals.
Administrative & Operational Tasks
- Submit and update gratuity reports in time for payroll.
- Monitor Guest Tracker and analyze daily metrics (average sale, labor costs).

- Conduct inventory spot checks and prepare wine orders.
- Respond to emails and interdepartmental requests promptly.

Morning Duties
- Review Reservations: Confirm all bookings for the day, noting special needs such as wine club status, unpaid reservations,
charcuterie add-ons, celebrations, or accessibility requirements.
- Create a Floor Plan: Assign staff to appropriate sections based on guest needs and employee strengths. Consider non-floor roles (e.g., tours, hosting) in planning.
- Property Walkthrough: Conduct a daily walkthrough as if you were a guest. Note and delegate tasks for cleaning, restocking, or repairs—especially in often-overlooked areas (bathrooms, behind the bar, doorways).
- Ensure Mis en Place: Confirm all tools and supplies are ready: menus, corkscrews, towels, pens, food, wine club forms, checklists, etc.
- Morning Briefing: Meet with staff on busy or event days to outline key updates: service changes, VIPs, low stock, new promos, and sales goals. Confirm section assignments and break times.
End of Day Duties
- Ensure all spaces are clean, organized, and ready for the next day’s service.
- Confirm washrooms are cleaned and stocked.
- Remove all garbage and food waste.
- Properly wrap or discard any open food.
- Complete bottle promos and close tills accurately.
- Secure the building (lock doors/windows, set alarms).
- Organize and restock roll-ups and service tools.
Qualifications

- Strong organizational and time management skills
- Excellent interpersonal and communication abilities
