Position: Head Sushi Chef

Wage: CAD $39.00 per hour

Types: Full time, Permanent (various shifts including evenings, weekends, and holidays)

Working hours: 30-40 hours per week

Benefits: 4% vacation pay

Job Duties

Plan and direct the preparation and cooking of sushi, sashimi, and other Japanese dishes;

Prepare and present a variety of sushi and sashimi, including nigiri, maki, rolls, and specialty dishes;

Fillet and prepare fish and seafood, including cleaning, deboning, slicing, and portioning for sushi and sashimi;

Plan menus, develop specialty dishes and chefs specials, and ensure food meets quality and presentation standards;

Oversee the selection and proper handling of fish and seafood and the preparation of sushi rice;

Estimate food requirements and assist in controlling food and labour costs;

Supervise, train,



and coordinate other kitchen staff;

Arrange for equipment purchases and repairs and participate in the recruitment and hiring of kitchen staff.

Job Requirements

Completion of secondary school is required

Minimum 5 years of experience in commercial food preparation, including two years in a supervisory capacity and experience as a chef, is required

Proficiency in fish filleting, including cleaning, boning, and slicing, is required

Skills demonstrations, including taste and plating abilities, may be required
