Job Summary The Sous Chef will report into the Food Service Manager/Dietary Manager.
The Sous
Chef is partially responsible for the day-to-day operations of the back of house for the culinary department. The Sous chef will contribute to the planning of the menu, ordering and scheduling of the department, as well as assist in maintaining residence food cost, inventory, and billing. The main responsibilities are preparing food, food quality and standards, ensuring all necessary food ingredients or tools are ready for use, assisting with smooth food service operations and compliance on all public health requirements.
Key Responsibilities
· Assist the Food Service Manager with weekly menu planning.
· Assist with the ordering of food and beverage items.
· Maintaining proper food cost program as per company’s expectations.
· Inventory management, food rotation and proper storage of all food and beverage.
· Maintain all equipment in the kitchen and ensure proper cleaning programs are in place.
· Ensuring that the operations and execution of meal service meet the company’s standards and expectations.
· Assist with training and shadowing of new back of house team members.
· Special event menu design and execution.
· Ensure all documentation is properly filled out daily (Temperature checks/Food logs/other documents).
· Work collaboratively with all other departments and support their needs with regards to food and beverage items.
· Maintain a proper bistro and ensure food rotation, staffing and cleaning is in place.
· Resident satisfaction regarding food service.
· Food Health and Safety.
· Ensuring the food quality is tracked and maintained by continuous training and education.
Job Qualifications
· Minimum of grade 12 education required.
· Diploma/Certificate from a Post Secondary Culinary Program is preferred.
· Minimum 2 years’ experience in a similar position is preferred.
· Must be able to communicate effectively, both written and verbally, in the English language.
· Excellent abilities to multitask.
· Knowledge of various cuisines and cooking techniques.
· Ability to work in a high stress environment.
· Able and willing to perform physical duties inside and outside the facility when necessary.
· Dependable, responsible and an ability to work well with others in a team environment and independently. Demonstrates a positive attitude necessary to meet the goals and standards of the residence.
· Must be capable of working in a fast-paced environment.
· Must be comfortable working with disinfectant and cleaning chemicals as well as hazardous materials.

$45,000-$50,000 per annum
