POSITION OVERVIEW
As a Seasonal Prep Cook / Dishwasher, you will be an integral part of our culinary team during our peak season, responsible for preparing ingredients and maintaining a clean, organized, and fully stocked kitchen so our line cooks can execute a memorable dining experience for our guests. In this role, you will work collaboratively with our kitchen staff to keep prep, dishware, and equipment flowing efficiently throughout service. This is a fixed-term position running through approximately October through January, with the possibility of extension or return in future seasons based on performance and business needs.
SKILLS AND QUALIFICATIONS
- Previous experience as a prep cook, dishwasher, or kitchen helper in a restaurant, pub, or similar high-volume food service establishment is an asset, but not required
- Basic knife skills and comfort with kitchen prep tools (mandoline, slicers, mixers)
- Working knowledge of food safety standards (safe food handling certification an asset, or willingness to obtain one)
- Comfortable operating dish machines, sinks, and standard kitchen cleaning equipment
- Ability to follow prep lists, recipes, and portioning guides accurately and consistently
- Strong time management skills, with the ability to prioritize tasks during high-volume rushes
- Ability to work efficiently in a fast-paced, high-volume environment while maintaining attention to detail and cleanliness
- Strong communication and teamwork skills, with the ability to collaborate effectively with kitchen staff and management
- Ability to take direction well and adapt quickly to changing volume, menu specials, or last-minute needs
- Flexibility to work various shifts, including evenings, weekends, and holidays throughout the season
- Available for the full duration of the seasonal period, including peak weeks
- Physical stamina and the ability to stand, bend,
and move for extended periods of time. You're comfortable being on your feet and staying active throughout your shift, often in a hot, wet, and fast-moving kitchen environment
- A positive attitude and willingness to learn, especially useful for team members newer to a high-volume kitchen
DUTIES & RESPONSIBILITIES
- Prepare ingredients according to daily prep lists, including washing, cutting, portioning, and storing food items to spec
- Wash dishes, utensils, pots, pans, and kitchen equipment promptly and thoroughly throughout service
- Keep dish pit, prep stations, and storage areas clean, organized, and stocked at all times
- Collaborate with line cooks and kitchen team members to ensure smooth, efficient operation during peak hours and high-volume rushes
- Monitor prep and clean dishware levels throughout service and communicate with the kitchen manager on low stock or urgent needs
- Adhere to all health and safety regulations, including proper food handling, storage, and temperature control
- Maintain excellent food safety compliance, including labeling, dating, and rotating stock (FIFO)
- Follow opening and closing procedures and checklists to keep the kitchen running smoothly, including dish machine shutdown and station breakdown
- Work as a team to keep the entire kitchen clean and sanitary throughout the shift, not just at close
- Take out garbage, recycling, and compost as needed, and maintain cleanliness in back-of-house areas
- Report any equipment issues, maintenance needs, or safety concerns to management promptly
- Help the kitchen scale up quickly and maintain consistency and speed during the busiest stretch of the year
- Support training or mentoring of new seasonal hires as needed once fully ramped up

AVAILABILITY REQUIREMENTS
- This role requires flexibility to work evenings, weekends, and holidays. Typical shifts range between 4–8 hours and extend into late night hours.
