We start the morning at 7am with packaging the production of Paneer (Cheese) from the previous day. There is some very short distance heavy lifting (40lb) from cart to table and table to cutter. After the cheese is cut we vacuum seal the blocks, which are around 10lb's and transfer them into a walk in fridge. After the morning packaging we will clean the kitchen and prep for the days production. The morning routine takes roughly 3-4 hours. We have a schedule of 4 days on 4 days off.
