Position Overview
Under the direction of the Executive Chef, Executive Sous Chef, Sous Chef or Supervisor, the Food Truck Handler / Cook is responsible for the safe operation, transportation, setup, food preparation, service, cleaning and shutdown of the Grey Eagle Resort &
- Casino food truck.
This is a combined culinary, customer-service and vehicle-operation position. The employee must be capable of safely driving the food truck to approved locations and events while also performing cooking and food-service duties in a high-volume mobile kitchen environment.
The Food Truck Handler / Cook is responsible for ensuring the vehicle, cooking equipment, food, supplies and operating systems are properly secured before transportation and safely operated throughout each event. The position requires an individual who can work independently, make sound decisions, provide excellent guest service and maintain Grey Eagle Resort &
- Casino standards while representing the organization both on and off property.
Food Preparation &
- Cooking
- Prepare, cook, assemble and serve all assigned food truck menu items according to approved recipes, portion-control guidelines and presentation standards.
- Safely operate equipment including fryers, flat tops, burners, ovens, refrigeration, freezers, steam wells and other food truck equipment.
- Ensure food is cooked, held, cooled and stored at appropriate temperatures.
- Maintain consistency in food quality, portion size, presentation and service times.
- Complete required food preparation before departure and replenish products during service as required.
- Monitor product levels and communicate shortages or additional preparation requirements to the Chef or Supervisor.
- Minimize food waste and properly record waste where required.
- Follow FIFO procedures, proper food-storage practices, allergen awareness and cross-contamination prevention.
Food Truck Driving &
- Transportation
- Must possess a valid driver's license appropriate for operating the food truck.
- Must maintain an acceptable driving record and remain eligible to operate company vehicles.
- Safely drive the food truck between Grey Eagle Resort &
- Casino and approved event or service locations.
- Follow all traffic laws, company vehicle policies and safe-driving practices.
- Complete required pre-trip and post-trip vehicle inspections.
- Report vehicle damage, mechanical concerns, warning lights or safety concerns immediately.
- Never operate the food truck when conditions make operation unsafe.
- Ensure the truck is legally and safely parked before beginning setup.
- Use additional caution when reversing and use a spotter whenever required or available.
- Ensure passengers only travel in approved passenger seating positions equipped with seatbelts.
- No employees are permitted to travel inside the food preparation/service area while the vehicle is moving.
Secure-for-Travel Requirements
- Before moving the vehicle, confirm cooking equipment is turned off as required and fryers/hot equipment are safe for transportation.
- Confirm propane systems and cylinders are properly shut down and secured as required.
- Shut down and secure generator equipment; disconnect or secure electrical cords and connections.
- Secure water systems, refrigeration/freezer products, food containers, utensils and small wares.
- Close and secure cabinets, drawers, refrigeration doors, service windows and exterior doors.
- Secure garbage, waste containers, exterior steps, signs, tables and all loose equipment.
- Complete a final walk-around to ensure nothing can shift, spill, fall or create a hazard while the vehicle is moving.
Food Truck Setup
- Park and position the food truck safely; apply the parking brake and follow stabilization procedures where required.
- Complete an exterior safety inspection before opening.
- Connect approved electrical services or start and safely operate the generator when required.
- Activate the water system and water pump, confirm potable water supply and verify wastewater capacity.
- Safely activate propane systems and turn on ventilation/hood systems before operating cooking equipment.
- Light and activate cooking equipment according to approved procedures.
- Confirm refrigeration and freezer temperatures.
- Ensure fire extinguishers and fire-suppression equipment are accessible.
- Safely open and secure the service window and set up POS equipment, menus, signage and guest-service areas.
- Complete required food-safety and equipment checks before service begins.
Propane, Generator &
- Fuel Safety
- Follow approved procedures when operating propane equipment and ensure tanks/connections are properly secured.
- Inspect propane connections for obvious signs of damage or leakage; shut down and notify management immediately if a leak is suspected.
- Follow approved generator startup and shutdown procedures.
- Never refuel a generator while it is operating or hot; keep fuel away from ignition sources and store it only in approved containers and locations.
- Maintain appropriate ventilation around generators and combustion equipment.
- Report damaged hoses, regulators, electrical cords or connections immediately.
Water &
- Wastewater Systems
- Monitor fresh-water and grey/wastewater levels during operation.
- Operate the water pump according to approved procedures.
- Never discharge wastewater except at an approved disposal location.
- Protect water lines and tanks from damage and freezing and report leaks or system problems immediately.
- Follow seasonal procedures designed to prevent frozen or damaged tanks, pumps and water lines.
Food Safety &
- Sanitation
- Follow all Grey Eagle Resort &
- Casino food-safety policies and applicable public-health requirements for mobile food-service operations.
- Maintain required hot- and cold-holding temperatures and complete temperature logs when required.
- Follow proper handwashing, sanitizer, food-storage and cross-contamination prevention procedures.
- Maintain clean and sanitary food-contact surfaces and proper separation of raw and ready-to-eat foods.
- Ensure food is protected during transportation.
- Follow WHMIS requirements and cooperate with health, fire, safety and other regulatory inspections.
Customer Service &
- POS / Cash Handling
- Provide professional and welcoming customer service and communicate clearly with guests.
- Accurately answer basic menu questions and maintain knowledge of ingredients and common allergens.
- Process orders efficiently and maintain professional appearance and conduct.
- Operate the approved point-of-sale system and accurately process cash, debit and credit transactions when assigned.
- Follow opening/closing cash procedures, protect company property and report discrepancies immediately.
- Assist with approved promotional initiatives and represent Grey Eagle Resort &
- Casino professionally at community events, concerts, festivals and other locations.
Inventory, Loading &
- Cleaning
- Assist with loading and unloading food, beverages, disposables and operating supplies.
- Complete event par levels/loading lists where required and verify adequate product before departure.
- Ensure all products and equipment are safely secured for transportation.
- Properly store returned products, complete inventory counts when required and communicate shortages.
- Help control food and operating costs through proper portioning, inventory management and waste reduction.
- Maintain a clean, organized and professional food truck throughout the shift.
- Clean cooking equipment, counters, refrigeration, floors and food-contact surfaces and remove garbage/recycling as required.
- Follow approved fryer-oil handling procedures and report damaged or malfunctioning equipment immediately.
End-of-Shift / Shutdown Responsibilities
- Stop food production and properly store or dispose of remaining food; complete required food-temperature and waste records.
- Clean and sanitize all food-contact surfaces and cooking equipment.
- Shut down fryers, burners, flat top, propane, generator and other equipment according to approved procedures.
- Disconnect and secure electrical connections and secure water/wastewater systems.
- Empty wastewater at approved locations when required.
- Secure refrigeration/freezer doors, service windows, cabinets, drawers and loose equipment.
- Remove exterior signage/equipment and garbage.
- Complete a final exterior inspection and confirm the vehicle is safe before transportation.
- Return the food truck to its designated parking/storage location and complete a post-trip inspection, reporting deficiencies.
HEALTH &
- SAFETY
- Use and wear required personal protective equipment and follow Grey Eagle Resort &
- Casino Occupational Health &
- Safety policies and procedures.
- Follow WHMIS requirements at all times.
- Use appropriate cut-resistant gloves when required and wear approved slip-resistant footwear.
- Follow safe lifting and safe oil-handling practices.
- Use caution around hot oil, hot surfaces, steam, open flames and confined work areas.
- Maintain explicit exits and working areas; immediately clean spills and address slip, trip and fall hazards.
- Report injuries, near misses, vehicle incidents, unsafe conditions and defective equipment immediately.
- Participate in required safety training and follow fire-safety and emergency procedures.
- Never operate equipment or the food truck when it is unsafe to do so.
Education And Experience
- Previous professional cooking experience is required; high-volume food-service experience is preferred.
- Previous food truck, catering, concession or mobile food-service experience is considered an asset.
- Practical knowledge of hot and cold food preparation, fryers, flat tops, burners and commercial kitchen equipment.
- Food safety certification or willingness to obtain required certification.
- WHMIS certification or willingness to complete required training.
- Basic knowledge of inventory control, portion control and food-cost practices is an asset.
- Post-secondary education in Culinary Arts, Hospitality or Culinary Management is considered an asset.
Driving Requirements
- Valid driver's license appropriate for the vehicle is mandatory.
- Must be legally eligible to drive in Alberta and maintain an acceptable driving record.
- Must meet Grey Eagle Resort &
- Casino requirements for operating company vehicles.
- Must be comfortable driving, parking and maneuvering a larger commercial-style food truck.
- Must immediately report any change that could affect legal ability or company authorization to drive the vehicle.
Knowledge, Skills And Abilities
- Strong cooking and food-preparation skills.
- Ability to work independently with limited supervision and safely operate/drive the food truck.
- Strong organizational, time-management and basic troubleshooting skills.
- Strong customer-service skills and ability to handle cash and operate POS systems when required.
- Ability to work effectively in a culturally diverse, team-oriented environment and take direction.
- Consistent attention to detail and ability to multitask in a noisy, hot, fast-paced environment.
- Ability to maintain professionalism while representing Grey Eagle Resort &
- Casino off property.
- Ability to mentor and assist in training new employees when required.
- Ability to communicate operational or safety concerns immediately.
PHYSICAL &
- WORKING CONDITIONS
- Frequent standing and walking, including extended periods inside a confined mobile kitchen.
- Working around hot equipment, fryers and cooking surfaces.
- Repetitive motions, bending, reaching, pushing and pulling.
- Lifting and carrying up to approximately 50 lbs., including loading and unloading food and equipment.
- Working outdoors during varying weather conditions and at concerts, festivals, community events and other outdoor locations.
- Working evenings, weekends, holidays and extended shifts during special events when required.
- Exposure to noise, crowds and changing environmental conditions.
OPERATIONAL EXPECTATIONS The Food Truck Handler / Cook may be assigned to operate the food truck at Grey Eagle Resort &
- Casino or at approved external locations including festivals, concerts, community events, promotional events and special functions.
The employee must understand that the food truck is both a mobile restaurant and a representation of Grey Eagle Resort &
- Casino. Food quality, cleanliness, safety, customer service, vehicle condition and professional conduct must therefore be maintained to Grey Eagle standards at all times.
The Food Truck Handler / Cook may be required to work independently and will be trusted with company property, food inventory, equipment, cash, vehicle operation and the overall security of the food truck.
Other Duties
- Attend training programs and meetings when required.

- Support special events and promotional initiatives.
- Complete required operational documentation and checklists.
- Immediately communicate significant vehicle, equipment, food-safety or operational concerns to management.
