About Eat Local Pizza
Eat Local Pizza is a Thunder Bay pizzeria built on scratch production and a heavily systemized back of house. We make our dough, sauce, and prep in-house daily, and we run the business on data — POS reporting, standardized recipes, costed menu items, and automated ordering and scheduling tools. It's a small operation where one person's decisions visibly move food cost, labour cost, and product quality in the same week.
The Opportunity
We're hiring a Production Manager Intern to learn and eventually own the production side of the business: what gets made, how much, when, by whom, and at what cost. This is not a job where you're handed a checklist. You'll be trained on our systems, then given real responsibility for output, quality, and the numbers behind them.
This is a career-track role. The intent is to develop the intern into a permanent Production Manager.
What You'll Do
- Plan and execute daily production: dough, sauces, prep lists, and par levels based on forecasted volume
- Own product consistency — dough hydration and fermentation, portioning, bake standards, and finished-product quality checks
- Manage inventory: receiving, rotation, counts, waste tracking, and reordering
- Track and report on food cost, yield, and waste; identify where margin is leaking and propose fixes
- Maintain and improve standard operating procedures, recipe specs, and production documentation
- Schedule and direct kitchen staff during production shifts; train new hires on production standards
- Maintain food safety and sanitation compliance, including HACCP-style records and Thunder Bay District Health Unit requirements
- Work with ownership on menu costing, new product development, and equipment maintenance
- Use our POS and reporting tools to connect sales data to production planning
What We're Looking For
Required
- Recent graduate of a post-secondary program in culinary arts, hospitality/restaurant management, food science, business, operations, or a related field
- Comfortable with numbers — you can build and read a food cost sheet without being afraid of it
- Strong organizational habits and the ability to work through a production schedule independently
- Physically able to work in a commercial kitchen: standing for full shifts, lifting up to 50 lbs, handling heat and repetitive tasks
- Available for evenings and weekends as production demands
- Legally entitled to work in Canada
Nice to have
- Commercial kitchen or high-volume food production experience
- Safe Food Handler certification (we'll support you in getting it if you don't have it)
- Familiarity with restaurant POS and inventory systems
- Experience training or supervising other people
