Job Description
JOB SUMMARY:

The Executive Chef is responsible for the entire kitchen operation. This position also is responsible for training kitchen staff on all related policies and procedures, health and safety procedures and quality food production. The Executive Chef works with the accounting team on month end duties and responsibilities relating to the kitchen department, as well as the human resource function of the department.





DUTIES AND FUNCTIONS:
Overall kitchen operation responsibility in the absence of the Executive Chef
Prepare food for all departments in the hotel
Moderate levels of paperwork required, including data entry
Ability to understand food costing, menu planning
Ensure quality of food and presentation
Participate in planning, preparation and standardization of all menus
Kitchen maintenance and cleanliness
Ensure customers’ needs are being met
Additional duties assigned by the general manager
