Vacancy Status: This posting represents an active vacancy for which we are currently hiring.
MAIN DUTIES:
The Sushi Cook is responsible for preparing and presenting high-quality sushi and Japanese-inspired dishes while maintaining food safety, consistency, presentation, and cleanliness standards throughout daily kitchen operations.
This position will be part of the Hotel’s Harriet's Rooftop Culinary team, and requires on-site presence.
GENERAL DUTIES
- Prepare, portion, and organize ingredients for sushi and menu items according to established recipes and standards.
- Assist with preparing sushi, sashimi, maki, nigiri, and other Japanese-inspired dishes.
- Properly handle, store, and monitor the quality and freshness of raw fish, seafood, and other ingredients.
- Complete daily mise en place and maintain consistency in food quality, portioning, and presentation.
- Maintain a clean, organized, and sanitary workstation while following all food safety and workplace standards.
- Support the Culinary Team with preparation and service to ensure accurate and timely execution of orders.

QUALIFICATIONS To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required. - Previous experience in a qualified kitchen, preferably in sushi or Japanese cuisine.
- Basic knowledge of sushi preparation, knife skills, and food handling techniques.
- Knowledge of proper handling and storage of raw fish and seafood.
- Ability to work a flexible schedule, including evenings, weekends, and holidays, as required.
- Food Handler Certification is required
- Must be legally eligible to work in Canada.
