Authentic Mexican Chef – Kitchen Lead

We are looking for an experienced and passionate Authentic Mexican Chef / Kitchen Lead to take charge of our kitchen and lead the preparation of authentic Mexican tacos and traditional Mexican cuisine.

The ideal candidate should have solid hands-on experience with traditional Mexican cooking techniques, authentic recipes, salsas, marinades, meats, tacos, and Mexican street food. We are looking for someone who understands the difference between authentic Mexican food and Tex-Mex and can maintain consistent quality, flavour, presentation, and portion control.

Key Responsibilities

- Lead and supervise the kitchen operations for our Mexican food program.
- Prepare and cook authentic Mexican tacos and traditional Mexican dishes.
- Develop and maintain authentic recipes, marinades, seasonings, sauces, salsas, and taco fillings.
- Prepare different styles of tacos, including proper preparation of meats, vegetables, tortillas, toppings, and garnishes.
- Demonstrate strong knowledge of Mexican spices, chilies, herbs, sauces and traditional cooking methods.
- Prepare authentic Mexican meats such as carne asada, al pastor, carnitas, birria, pollo and other traditional preparations.
- Prepare fresh salsas, guacamole, pico de gallo, pickled vegetables and Mexican toppings.
- Ensure proper preparation and handling of tortillas, including knowledge of corn and flour tortillas.
- Maintain consistency in taste, portion sizes and presentation.
- Train and supervise kitchen staff on Mexican food preparation and cooking techniques.
- Organize daily prep lists and ensure ingredients are prepared before service.
- Monitor food quality, freshness, inventory and food waste.
- Assist with ordering and maintaining adequate stock of kitchen ingredients.
- Maintain a clean,



organized and properly sanitized kitchen.
- Follow all food safety, sanitation and workplace safety regulations.
- Work efficiently during busy service periods while maintaining food quality and ticket times.
- Help create new Mexican menu items and seasonal specials when required.

Requirements
- Proven professional experience preparing authentic Mexican cuisine.
- Strong knowledge of Mexican tacos and traditional Mexican food.
- Experience leading or supervising a kitchen is strongly preferred.
- Knowledge of traditional Mexican ingredients, spices, chilies, sauces and cooking techniques.
- Ability to prepare food from scratch rather than relying primarily on pre-made products.
- Strong understanding of food safety, sanitation and proper food handling.
- Ability to manage kitchen prep, inventory and staff during busy service.
- Excellent organizational and communication skills.
- Must be reliable, hardworking and able to work in a rapid-paced restaurant environment.
- Spanish-speaking candidates with professional Mexican culinary experience are strongly encouraged to apply.

What We Are Looking For We are specifically looking for a chef who can bring genuine Mexican culinary experience and authenticity to the kitchen—not simply someone who has general line-cook experience.

The successful candidate will be expected to lead the Mexican kitchen, maintain authentic flavours and recipes, train the team, and take ownership of the overall quality of the Mexican food program.

Job Types: Full time, Part-time

Pay: $4,000.00-$5,000.00 per month
