Primary duties of this role include, but are not limited to: Set up and operate machines to clean, cut, process, and package fresh fish products in accordance with operating procedures for safety and quality. Cut, clean, and trim whole fish for further processing. Scrape away scales, cut fish into fillets or portions, and remove scrap parts using a knife. Check fish fillets to determine the optimal number and size of fillet sections; cut sections according to specifications and place them in containers for weighing.
