They ensure proper temperature monitoring, operate relevant equipment, and maintain a clean, safe work area.ResponsibilitiesConduct pre-operation inspection and checklist for the work areaDeliver meat to the potting or stuffing table from the coolerWeigh product injected ham accurately using the scaled providedAdd spices as per work orderPlace product in pots and vacuum sealPress pots to lock in placePlace pots or stuffed hams on cartsSpring roasted hams as requiredMonitor temperatures using a temperature probe and completion of daily temperature tracking sheetOperate VC99 vacuum, ham presses,
