We are seeking an energetic and detail-oriented Executive Chef to lead our culinary team. In this vital role, you will oversee all aspects of food preparation, kitchen operations, and restaurant management. Executive Sous Chef
Role Summary
Reporting to the Director of Food and Beverage, the Executive Sous Chef is accountable for the overall success of daily kitchen operations. This role demonstrates advanced culinary expertise, operational leadership, and a commitment to luxury service standards aligned with JW Marriott and LQA expectations.
The Executive Sous Chef leads by example, actively participating in food preparation while guiding the culinary team to deliver consistent, high-quality products across all outlets. This position is responsible for enhancing both guest and associate satisfaction while driving strong financial performance. Oversight includes all food production areas (banquets, restaurants, in-room dining, lounges, and associate dining) as well as stewarding and purchasing functions.
Accountabilities
- Lead, mentor, and develop the kitchen leadership team, fostering a culture aligned with JW Marriott values and LQA standards
- Provide clear direction for day-to-day culinary operations, ensuring efficiency, consistency, and excellence
- Demonstrate hands-on leadership and operational knowledge of all kitchen roles Set performance expectations, monitor progress,
and deliver ongoing coaching and feedback
- Model professionalism, integrity, and service excellence while inspiring team engagement Build a culture of trust, respect, collaboration, and accountability
- Ensure fair and consistent application of policies and procedures Monitor staffing levels to meet operational demands, guest expectations, and financial goals
- Maintain open communication and encourage associate engagement through feedback and support Supervise and coordinate culinary activities across all outlets and functions
- Demonstrate culinary techniques and coach staff to refine skills and presentation standards Develop and enforce purchasing, receiving, and inventory control procedures
- Establish and track departmental goals including financial, operational, and team objectives Champion safety protocols and ensure compliance with all health and safety standards
- Manage controllable expenses, including food cost, labor, uniforms, and equipment Support and contribute to the annual budgeting process
- Drive menu development aligned with seasonal offerings and guest preferences Monitor food quality, taste, and presentation to ensure luxury-level standards are consistently achieved
- Oversee compliance with food safety, sanitation, and handling standards Ensure proper storage, labeling, and temperature control of all food products
- Maintain standards for purchasing, receiving, and inventory management Support elevated culinary execution for special events, VIP guests, and high-profile functions
- Deliver "above and beyond" service behaviors in both product and guest interactions Identify guest needs and provide tailored culinary experiences
- Lead daily operations with a focus on exceeding guest expectations Engage with guests to gather feedback and continuously improve offerings
- Resolve guest concerns professionally and promptly Empower associates to deliver exceptional service within established guidelines
- Analyze Guest Satisfaction Survey (GSS)
and Event Satisfaction Survey (ESS) results to identify opportunities and celebrate successes Identify and develop talent through coaching, mentoring, and training programs
- Ensure fair and equitable treatment of all associates
- Oversee performance management and conduct appraisals for direct reports
- Partner with Banquets and Catering teams to enhance food knowledge and menu execution Observe service behaviors and provide actionable feedback
- Manage disciplinary processes in accordance with Marriott SOPs and LSOPs Champion the Marriott GXP platform to address and resolve guest feedback
- Analyze operational data and implement solutions to improve performance and guest satisfaction
Requirements
- Red Seal Certification required Minimum 6 years of progressive culinary experience in a hotel, resort, or luxury environmentOR 2-year degree in Culinary Arts, Hospitality Management, or a related field, with 4 years of relevant experience
- Strong understanding of luxury hospitality standards (LQA experience considered an asset) Proven ability to lead high-performing teams in a fast-paced environment
- Advanced culinary knowledge, including modern techniques and global cuisine trends
- Strong financial acumen related to food cost control and budgeting Excellent communication, leadership, and organizational skills
Working Conditions
- Ability to work in diverse environments, including hot, humid, and cold conditions Flexibility to work evenings, weekends, and holidays as required
- Ability to lift, carry, push, or pull up to 50 pounds without assistance
- Capable of standing, walking, bending, and working for extended periods
- Ability to navigate wet and slippery surfaces safely
