Coffee by day. After five, a cocktail bar.
10 DEAN is a small group of coffee-and-cocktail bars around Toronto. Most locations pour both side by side all day, with the weight on coffee. Elm is the exception. It's our flagship and our biggest space, open two years, in a neighbourhood that turned out to want the cocktails as much as the coffee, so two months ago we made the switch. After 5pm Elm stops serving coffee and becomes a cocktail bar, full stop.
We sit inside a residential building, and we lean into that. We're an extension of the neighbourhood people live in, not a standalone night-out spot. That shapes the room a little: warm and familiar first, sharp and put-together underneath.
The program The menu changes with the seasons, and it's where we get to play. We do a lot in-house: infusions and fat-washes, oleo-saccharum and house cordials, clarified and milk-washed builds. If that list did something for you, we probably speak the same language. Wine and beer are on too, and the zero-proof side gets the same care as anything with alcohol in it.
Hospitality is the point
You'd be an all-rounder: floor one shift, behind the bar the next. Opening and prepping, checking stock, running service, guiding guests through the menu, closing it down properly for whoever's next. We can go from quiet to a full house fast, and staying organized once that happens matters more than being quick when it's calm.
Anyone can be shown how to build a Negroni, and we'll spend the time getting yours right. The harder thing is the feel of a valuable bar: clocking that someone's celebrating, remembering what a regular drinks, reading a room before anyone has to ask you for anything. Warmth counts for more here than polish, and that's what makes people come back.
Bartending experience is welcome but not required. If you've been serving and you're itching to get behind the bar and learn the craft,

What you'd bring A real interest in mixology and the craft of it. Comfort in a fast-moving evening service. Smart Serve (required), and Food Handler, or the willingness to get both sorted before you start. Availability across evenings, weekends, and holidays, because that's when a bar lives.
A bit about who we are
10 DEAN was created by Fitzrovia, one of Canada's largest residential developers, and you'd be joining the Fitzrovia team. Each of our spaces is built into a Fitzrovia building: beautiful spaces, and a neighbourhood around us from the day the doors open. Residents and locals end up sitting side by side, and they're all our guests.
