Chef/Cook Position at Kettle Valley Public on Main

We're the neighbourhood pub on Main Street. Six years in, mostly regulars, and a kitchen that does two things at once: proper pub food (the POM burger, waffle fries, a full rack of ribs on Saturdays) and Hong Kong–style dim sum every weekend. Har gow, siu mai, char siu bao, sticky rice in lotus leaf, all made fresh.
That mix is the job. If you've only ever worked one side of it, that's fine, we'll teach you the other. The part we can't teach is caring what the plate looks like when there are twelve tickets up on a Friday.
The shifts
We're closed Mondays. Tuesday to Saturday we're open 11 to 10, Sunday 11 to 9. Dim sum brunch runs 11 to 4 both weekend days, and Sunday is all-day happy hour with every weekly special on the board.
What you'd actually be doing
- Running a station through service: Grill, fry, depending on what you've got and where we need you
- Prep: sauces, portioning, breaking down deliveries, getting the line set before doors
- Cleaning as you go, not just at close
- Closing properly. Labels, dates, temps, cooling done right.
- Telling the kitchen manager we're low on something before we run out mid-service
- Weighing in on specials if you want to. Good ideas go on the board.
What we need
- Real line experience. A year somewhere busy is plenty.
- FOODSAFE Certificate. If it's lapsed or you've never taken it, apply anyway and tell us, it's a one-day course and we'll work out the timing with you.
- Staying level when it's slammed. Friday and Saturday nights will be busy.
- Standing for eight hours, lifting stock. Though there will be time for short breaks in the afternoon.
- Showing up when you said you would. Biggest one on the list.
Helps, doesn't make or break
- Something you'd want to put on the specials board
- Knowledge in small amount of East Asian foods.
