As First Cook, the care you devote to all aspects of food preparation will result in the creation of truly spectacular fare.What you will be doing:Reporting to the Executive Sous Chef, responsibilities and essential job functions include but are not limited to the following:Consistently offer professional, friendly and proactive guest service while supporting fellow ColleaguesExecute and oversee all food items for a la carte and or banquet menus in service to hotel recipes and standardsAssist and oversee ordering levels and production in relevant departments in the absence of CDPEnsure the cleanliness and maintenance of all work areas, utensils, and equipmentHave full knowledge of all menu items, daily features and promotionsControl waste and spoilage in the assigned departmentEnsure proper labeling, dating and storage of all items in the kitchenResponsible for ensuring preparation of all pertinent food items for work station and able to maintain the departments level of production and guest expectations in the absence of the Chef de PartieMonitor present and upcoming business volumes as well as food items and to communicate relevant information to their department in a timely mannerHandle guest allergy concerns with appropriate care and importance by reporting to CDPFollow all safety and sanitation policies when handling food and beverageEmbrace the Fairmont brand promise and luxury in your role and in all your interactions.Other duties as assignedQualificationsYour experience and skills include:2-3 years kitchen experience in a 4 or 5 star hotel or reputable restaurant requiredSuccessful completion of Alberta’s Food Handler Certification is requiredDiploma or Equivalent Certification in a Culinary program requiredStrong Knife skills and safe handling is requiredExcellent communication and organizational skills
