Who We Are
Smoking Section is a live-fire Texas-style barbecue residency at Great Lakes Brewery in Etobicoke. We run a food truck on-site, Thursday through Sunday, smoking everything low and slow and building it fresh for a steady line of regulars — no shortcuts, no reheated frozen product, real fire and real technique behind every plate. We were recently featured in BlogTO for what we're building here.
This is a working kitchen inside a working brewery busy, loud, fast, and genuinely good barbecue. We're looking for someone who wants to be part of that, not just clock a shift.
The Role The Line Cook handles assembly and service platters, sandwiches, prep, and the line on the truck, while our pitmaster runs the smoker separately. Thu–Sun, 25+ hours/week, seasonal through the end of our fall run (November 30). This is fast-paced and high-volume by design: multiple proteins and sides per plate, a full sandwich menu including our Hogtown Hero, and prep that doesn't stop between rushes.
What You'll Do
- Assemble platters to order multiple proteins and sides, accuracy and speed under pressure
- Build sandwiches to order, including the Hogtown Hero, and thicc burger
- Handle heavy prep bulk-portioning proteins, prepping sides, making sauces restocking stations through service
- Take orders and run Square during busy stretches
- Work standing, high-heat shifts of 7-9 hours in a food truck setting, lifting product as part of normal prep
What You'll Need
- 1+ years of previous line cook or high-volume food service experience, you know what "in the weeds" means and you don't fall behind
- Speed, accuracy, and a positive attitude under pressure
- Comfortable working in a compact truck environment, standing for full shifts
- Ability to lift up to 50 lbs
- Food Handler Certification required
- Authorization to work in Canada
