Job Title: Chef/Cook

Full-time: 40-44 hours per week

(Shift‑based, including mornings, evenings, weekend, and holidays.

Position Overview The Chef at Allwyn’s Jamaican Restaurant is responsible for preparing high‑quality Caribbean dishes with speed, consistency, and authentic flavor. This role oversees daily kitchen operations, ensures food safety compliance, and maintains the signature taste of Allwyn’s staples such as jerk chicken, oxtail, curry dishes, patties, and classic sides. The ideal candidate is experienced in Caribbean cuisine, thrives in a fast‑paced setting, and can uphold the restaurant’s reputation for flavorful, fresh food.

Key Responsibilities

- Prepare and cook core menu items including jerk chicken, jerk pork, curry goat, oxtail, fried chicken, patties, rice and peas, coleslaw, festivals, and other Caribbean staples.
- Maintain consistency in flavor, texture, and portion sizes across all dishes.
- Work efficiently during high‑volume periods while maintaining food quality and speed of service.
- Set up and maintain prep stations, ensuring all ingredients are properly marinated, seasoned, and stocked.
- Oversee kitchen workflow, timing, and plating standards to match Allwyn’s fast‑food service model.
- Train kitchen staff on Caribbean cooking techniques, safety procedures, and flavor profiles.
- Monitor inventory levels, track usage, and assist with ordering to ensure ingredient availability.
- Maintain strict food safety, sanitation, and health‑code compliance at all times.
- Assist with developing new menu items or specials that align with Caribbean flavors and customer demand.
- Ensure all kitchen equipment is clean, functional, and properly maintained.

Requirements

- Proven experience cooking Caribbean or Jamaican cuisine in a professional kitchen.
- Strong knowledge of Caribbean spices, marinades, jerk preparation, stewing, braising, and frying techniques.




- Culinary training or certification is an asset but not required if experience is strong.
- Valid Food Handler’s Permit or ability to obtain one.
- Ability to work quickly and efficiently in a high‑volume, fast‑food environment.
- Strong communication skills and ability to work well within a small team.
- Excellent multitasking and organizational abilities.
- Reliability, punctuality, and a passion for Caribbean food culture.

Nice to have:

- Ability to maintain the signature Allwyn’s flavor profile across all dishes.
- Creativity in developing Caribbean‑inspired specials or seasonal items.
- Experience managing food costs, minimizing waste, and optimizing prep processes.
- Calm under pressure, especially during peak lunch and dinner rushes.

Work Environment

- Fast‑paced Caribbean kitchen with high customer volume.

Physical Requirements

- Ability to lift, carry, and move at least 30 lbs as part of daily kitchen duties (e.g., moving food supplies, equipment, and bulk ingredients).
- Ability to stand for extended periods and perform repetitive motions in a fast‑paced kitchen environment.
- Ability to work in a hot setting around ovens, grills, and fryers while following all safety procedures.
- Ability to bend, reach, and move safely around a busy kitchen space.
