Job Overview The Chef de Cuisine is responsible for directing the daily operation of the kitchen, including food preparation, quality assurance, inventory management, cost control, and team leadership. Reporting to the Executive Chef, this role oversees culinary operations and supervises kitchen associates to ensure compliance with Marriott standards, food safety regulations,



and operational goals while delivering exceptional guest experiences.

Duties and Responsibilities

Financial & Operational Management

- Oversee food preparation methods, portion control, and presentation standards to ensure consistency and minimize waste.
- Assist in creating, testing, costing, and implementing new menu items and recipes.
- Maintain accurate recipe documentation and food costing records.
- Support inventory control procedures and ensure the proper storage and security of food products, supplies, and kitchen equipment.
- Monitor food, labour, and operational costs while supporting departmental profitability goals.
- Complete production reports, forecasts, and other operational documentation as required.
- Assist with annual budget planning and departmental goal setting.

Leadership & Team Development

- Manage day-to-day kitchen operations, assigning work and ensuring effective staffing levels.
- Coach, mentor, and develop culinary team members through ongoing training and performance feedback.
- Ensure all associates are trained in Marriott standards, food safety requirements, and health and safety practices.
- Support recruitment, onboarding, performance management, and disciplinary processes in accordance with company policies.
- Foster teamwork and collaboration across all departments.

Guest Experience

- Ensure all menu items are prepared and presented according to established quality standards.
- Monitor guest feedback and implement improvements to food quality and presentation.
- Assist in resolving guest concerns and special requests relating to culinary services.
- Support banquet, catering, restaurant, and special event operations to ensure exceptional guest satisfaction.

Responsible Business

- Ensure all kitchen equipment is maintained, cleaned, and operating safely and efficiently.
- Maintain kitchen cleanliness and sanitation standards that meet or exceed public health requirements.




- Coordinate maintenance requests and communicate repair needs to the Engineering department.
- Participate in sustainability initiatives and waste reduction programs.
- Ensure compliance with all Occupational Health & Safety requirements, food safety regulations, Marriott brand standards, and company policies.

Qualifications and Requirements Education: High school diploma or equivalent required. Degree, diploma, or certificate in Culinary Arts preferred.

Experience: Minimum three years of experience in a Sous Chef or senior culinary leadership role, or an equivalent combination of education and experience.

Certifications: Red Seal Certification required. Food Handler Certification required.

Physical Requirements This position requires the ability to:

- Lift and carry items weighing up to 50 pounds.
- Stand and walk for extended periods.
- Handle food products, kitchen equipment, and utensils safely.
- Bend, stoop, kneel, and reach frequently throughout the shift.
- Work in hot, fast-paced kitchen environments.

Schedule Requirements

- Availability to work days, evenings, weekends, and holidays as required.
- Flexibility to support banquet functions, special events, and operational needs.

Pay: $53,000.00-$60,000.00 per year
