Job Description
We invite you to join the world of luxury hospitality at Fairmont Jasper Park Lodge, as our new First Cook. Every memorable dining experience at the Fairmont Jasper Park Lodge begins behind the scenes with our culinary team’s commitment to safe, effective operations and exceptional cuisine.
As First Cook, the care you devote to all aspects of food preparation will result in the creation of truly spectacular fare.
What you will be doing:
Reporting to the Executive Sous Chef, responsibilities and essential job functions include but are not limited to the following:
- Consistently offer professional,friendlyand proactive guest service while supporting fellow Colleagues
- Executeandoverseeallfood items for a la carte andor banquetmenusin serviceto hotel recipes and standards
- Assistandoversee ordering levels and production in relevant departments in the absence of CDP
- Ensure the cleanliness and maintenance of all work areas, utensils, and equipment
- Have full knowledge of all menu items, dailyfeaturesand promotions
- Control waste and spoilage in the assigned department
- Ensure proper labeling, datingand storageof all items in the kitchen
- Responsible for ensuring preparation of all pertinent food items for work stationand able tomaintainthe departments level of production and guest expectations in the absence of the Chef de Partie
- Monitor present and upcoming business volumes as well as food items and to communicate relevant information to their departmentin a timely manner
- Handle guest allergy concerns withappropriate careand importance by reporting to CDP
- Follow all safety and sanitation policies when handling food and beverage

Qualifications
Your experience and skills include:
- 2-3 years kitchen experience in a4 or 5 starhotel or reputable restaurantrequired
- Successful completion of Alberta’s Food Handler Certification is required
- Diploma or Equivalent Certificationin aCulinaryprogramrequired
- Strong Knife skills and secure handling isrequired
- Excellent communication and organizational skills
- Stronginterpersonal– remove this wordandproblem solvingabilities
- Ability to work well under pressure in a fast-paced environment
- Ability to work cohesively with fellow colleagues as part of a team with minimum supervision
- Ability to focus attention on guest needs,remainingcalm and courteous at all times
Visa Requirements: Must be legally eligible to work in Canada. The hotel is unable toassistcandidates in obtaining Canadian work authorization.
