Job Summary
Ramen Betsutenjin is seeking an experienced, hands-on Store Manager & Head Ramen Chef to lead our daily operations. This is an all-around leadership role requiring culinary mastery in authentic Japanese ramen preparation, proactive floor service, kitchen management, inventory control, and staff development. The ideal candidate thrives in a quick-paced environment and seamlessly transitions between back-of-house cooking and front-of-house guest hospitality.
Responsibilities
1. Kitchen Leadership & Culinary Execution
- Prepare and execute signature Japanese ramen recipes, broth bases, tare, chashu, and specialized noodle preparation to brand standards.
- Supervise kitchen workflow, line prep, assembly, and presentation to ensure food quality and speed of service.
- Enforce food safety, hygiene, and kitchen sanitation protocols in accordance with local health authorities.
2. Front-of-House & Customer Service
- Lead dining room service, seat guests, take orders, and serve food and beverages during peak rushes.
- Handle customer feedback, resolve inquiries promptly, and maintain hospitality standards.
- Operate POS systems and ensure accurate cash and electronic payment balancing.
3. Operational & Inventory Management
- Oversee daily opening and closing procedures, health inspections,
and kitchen maintenance.
- Manage stock levels, monitor wastage, and execute weekly purchasing for fresh ingredients, dry goods, and consumables.
- Maintain vendor relationships and verify delivery quality and invoice accuracy.
4. Staffing, Scheduling & Training
- Recruit, onboard, schedule, and supervise kitchen cooks and front-of-house staff.
- Conduct training programs on authentic ramen recipes, cooking methods, plating, service etiquette, and safety standards.
- Monitor team performance, handle conflict resolution, and maintain a collaborative work culture.
5. Qualifications & Requirements
- Minimum 3–4 years of hands-on managerial or supervisory experience in a high-volume restaurant or Japanese ramen shop.
- Proven culinary expertise in authentic Japanese ramen preparation and commercial kitchen equipment.
- Strong leadership, organizational, and multitasking skills with a hands-on work ethic.
- Valid Food Safe Level 1 / Level 2 certification (or willingness to obtain before start).
- Fluency in English (knowledge of Japanese is a strong asset for recipe execution and communication).
Pay: $20.00-$25.00 per hour
