SUMAQ Iraqi Charcoal Grill is looking for an experienced, reliable, and hardworking Shawarma Cook to join our kitchen team.

The Shawarma Cook will be responsible for preparing, cooking, slicing, and serving shawarma while maintaining SUMAQ’s standards for quality, portioning, cleanliness, food safety, and presentation.

We are a busy Iraqi charcoal grill restaurant, and the ideal candidate must be comfortable working in a rapid-paced, high-volume kitchen environment.

Responsibilities

- Prepare and cook chicken and meat shawarma according to SUMAQ recipes and standards.
- Properly set up, operate, and maintain vertical shawarma machines.
- Slice shawarma safely and consistently throughout service.
- Monitor cooking temperatures and ensure meats are cooked and handled safely.
- Maintain proper portion sizes and food presentation.
- Prepare shawarma wraps, plates, sandwiches, and related menu items.
- Prepare and organize ingredients, sauces, vegetables, bread, and garnishes required for the shawarma station.
- Keep the shawarma station fully stocked and ready during busy service periods.
- Monitor product levels and communicate preparation needs to the kitchen team.
- Follow proper food storage, labeling, rotation, and FIFO procedures.
- Maintain a clean and sanitized shawarma station, equipment, knives, cutting boards, and surrounding work areas.
- Follow all food safety, sanitation, and workplace health and safety requirements.
- Work closely with grill staff, kitchen helpers, cashiers, servers, and management.
- Assist with opening, closing, and deep-cleaning duties.
- Minimize food waste and follow SUMAQ portion-control standards.
- Perform other kitchen duties as required by management.





Requirements
- Minimum 2 years of previous shawarma preparation and cooking experience is required.
- Must have experience operating a commercial shawarma machine.
- Strong shawarma slicing and knife skills.
- Experience working in a busy, high-volume restaurant environment.
- Good understanding of meat handling, food temperatures, sanitation, and food safety.
- Ability to maintain consistent quality and portion sizes during busy periods.
- Ability to work quickly and efficiently under pressure.
- Reliable, punctual, and able to follow recipes and instructions.
- Strong attention to cleanliness and organization.
- Ability to stand for extended periods and work around heat and hot equipment.
- Ability to lift and handle food products, shawarma supplies, and kitchen equipment as required.
- Ability to work independently and as part of a team.
- Flexible availability, including evenings, weekends, and holidays.

Experience Shawarma Cook / Shawarma Station Experience: Minimum 2 years required
