Overview The Job

MICHELIN Guide recognized, and Official Restaurant of Spain, Como Taperia is looking for an experienced Beverage Director & Assistant General Manager to join our management team. As the company grows, and we are opening another restaurant, we have some exciting opportunities.

We pride ourselves on creating one of the most authentic tapas experiences outside of Spain. We are a busy, fast-paced restaurant committed to excellent food, drinks, atmosphere, and service, and we’re looking for someone who is passionate, motivated, loves hospitality, and is ready to hustle alongside our growing team.

This is a hands-on management position, with the majority of your time spent on the floor leading service. As an Assistant General Manager, you’ll be a key part of the day-to-day operation of the restaurant, working closely with both FOH and BOH to create an environment that is welcoming for our guests and positive, comfortable, and engaging for our staff.

You will also take ownership of Como’s beverage program, with the role of Wine Director and maintaining the bar program with assistance from management and ownership. From our Spanish wine list to sherry, and vermouth you’ll ensure our beverage program remains exciting, profitable, consistent, and distinctly Como.

We’re looking for someone who wants to bring ideas to the table, take ownership, and grow with us. And who knows, maybe even join us on our next research trip to Spain!

The Role

Restaurant Leadership & Operations

- Manage day-to-day restaurant operations alongside the General Manager and management team
- Lead and supervise busy service shifts as Manager on Duty (MOD)
- Maintain a strong presence on the floor and lead by example
- Support and motivate the FOH team while maintaining high standards of hospitality
- Work closely with BOH leadership to ensure smooth service and communication
- Maintain a positive, professional, and motivating workplace environment




- Assist with hiring, onboarding, training, and development of FOH staff
- Assist with staff scheduling and labor management
- Support event planning and execution
- Handle guest feedback and service recovery when required
- Bring new ideas, initiatives, and solutions to the management team

Beverage Program

- Lead Como’s overall wine and beverage program
- Manage wine, spirits, beer, sherry, vermouth, and other beverage selection
- Oversee beverage purchasing, ordering, inventory, and stock management
- Maintain and develop our wine menus, ensuring they remain on brand, distinctly Spanish, and commercially successful
- Maintain high standards for bar organization, cleanliness, consistency, and beverage quality
- Work with suppliers and reps to source new and interesting products
- Lead beverage education and training for the FOH team
- Continue developing the team's knowledge of Spanish wine, spirits, cocktails, and drinking culture
- Collaborate with the bar team on seasonal cocktails, features, and new ideas

Financial Management

- Manage beverage costing and margins
- Oversee beverage budgets and forecasting
- Complete and review monthly inventory and beverage cost tracking
- Identify opportunities to improve profitability without compromising quality
- Assist with monthly labor and restaurant cost management

What We're Looking For

- A genuine passion for food, wine, drinks, hospitality, and Spanish culture
- Minimum 3 years of experience in a high-volume restaurant
- Minimum 2 years of management experience leading a team




- Strong wine and beverage knowledge
- Experience managing or contributing to wine programs, bar experience a plus!
- Strong understanding of inventory, costing, budgeting, and beverage margins
- Previous serving and/or bartending experience
- Excellent leadership and communication skills
- Strong organizational and problem-solving abilities
- Comfortable making decisions and leading a busy restaurant during service
- Someone who is equally comfortable opening a bottle of excellent Spanish wine, talking a guest through the menu, jumping behind the bar, or leading a packed Saturday-night service
- A positive, team-first attitude with a desire to learn and grow

Schedule This position will typically consist of four service shifts and one administrative day per week.

Service shifts are generally 8-10 hours, with the majority of the role spent working directly with the team on the floor.
