The Food and Beverage Director is responsible for coordinating, supervising and directing all aspects of our restaurants, while maintaining profitable restaurant outlets, high quality products and service levels. The Food and Beverage Director is required to market ideas to promote business, reduce employee turnover, maintain revenue, payroll budgets and meet budgeted productivity while keeping quality consistently high.
With the assistance of a supervisory team, The Food and Beverage Director will oversee all day-to-day operations of the Red Antler, The Den, Paradise Camp, Tube Town Café & Bar, D’Argento/La Plata, The Town Hall and Coffee +, SilverStar Food Truck.
This is a full-time year-round position reporting to the General Manager.
Job Summary
PRIMARY DUTIES & RESPONSIBILITIES:
People Management Responsibilities
· Assisting, investing, and driving the hiring of talent, training, coaching, development, and retention of team members.
· Lead and develop a team of Managers and employees over multiple dining periods and outlets.
· Assist and hold accountable all F&B; Managers to their forecasts and budgets.
Operational & Financial Management Responsibilities
· Annual budget preparation for all outlets.
· Preparation and approval of all monthly forecasting and reports and assist in the development, implementation and monitoring the budget to maximize revenues.
· Forecasting business levels and schedules accordingly.
· Ensure expenses (labour and operations) are managed to achieve maximum profitability.
· Work closely with the Executive Chef to develop menus and ensure costings are controlled.
· Sourcing all products with the assistance of the Executive Chef.
· Identify and correct inventory trends or COG issues.
· Actively participate in the design and execution of marketing initiatives to drive business levels.
· Co-ordination of special events within the outlets.
· Drive creativity with signature features in each restaurant.
General Responsibilities
· Oversee, review and drive change to make an incredible experience for guests and our team in all Food & Beverage operations.
· Use established measurement tools (comment cards and social media) to track and trend guest satisfaction, to ensure we are meeting and exceed company goals.
· Respond in a positive and timely manner to all internal and external guest requests and complaints, while meeting the standards to exceed the clients' expectations in addition to remaining budget conscious
· Communicate effectively and appropriately with all departments. This will include written and verbal and both formally and informally
· Encourage interaction with staff, including co-operation on projects, exchange of ideas and information and embrace frequent interaction with executive and/or management to exchange ideas and information, present reports and recommendations.
· Communicating with suppliers.
· Strive to develop own knowledge, skills and abilities and consistently share these with others.
· Maintain a safe working environment, be Health and Safety conscious and actively involved in maintaining and improving a safe work environment.
· Actively participate in the environmental program and department specific initiatives in working towards sustainable operations.
· Adhere to, and implement all required Guidelines, Policies and Procedures, Rules and Regulations.
EDUCATION & EXPERIENCE:
· 8+ Years of direct work experience in a management capacity in a restaurant/resort setting.
· Experience in managing multiple outlets required.
· Proven high-end food and beverage leadership experience / Wine knowledge and fine dining management experience.
· Thrives in a fast paced and high-energy work environment.
SKILLS REQUIRED:
· Extensive and detailed food and beverage management experience
· Experience in all aspects of customer service and people management
· Ability to examine and re-engineer food and beverage operations, develop and implement current strategies
· A “multi-tasker”, ability to juggle, prioritize and complete numerous tasks
· Thrives under a high pressure and fast paced workplace
· Passionate about food and beverage
· Enjoys creating a fun and rewarding work environment
· Exceptional conflict resolution, negotiation, and objection handling skills
· Ability to respond quickly in a dynamic and changing environment
· Good training, coaching and mentoring skills are essential
· Able to build and maintain lasting relationships with corporate, key business partners and customers
· Knowledge of cost analysis, fiscal management and budgeting techniques
· Ability to co-ordinate and organize meetings and special events
· Ability to analyze and interpret the needs of customers and offer the appropriate options and solutions required
· Experience with Square
· Flair for creating new and fresh food and drink ideas
· Thorough wine and spirit product knowledge
