Cave Spring Vineyard seeks a skilled and innovative Winemaking Technician to join our dynamic team. The ideal candidate will have experience with laboratory and fermentation protocols particularly with Indigenous yeast fermentations. They also need to have a strong knowledge of cellar operations and vineyard protocols and how they affect the wines.
Duties & Responsibilities
Under the instruction of the Head Winemaker, the Winemaking Technician will be responsible for:
- Laboratory analysis during all stages of production. This will include but is not limited to Brix, pH, Titratable Acidity, alcohol, sulphur analysis, paper chromatography, spectroscopy, residual sugars and turbidity.
- Responsible for monitoring, tracking and making additions to fermenting wines to ensure proper yeast growth and desired organoleptic properties
- Understand how to manage wild fermentations using minimalist and low intervention winemaking methods.
- Responsible for monitoring, tracking and making additions to wines undergoing Malo-lactic fermentations to ensure proper growth and desired organoleptic properties.
- Responsible for analyzing wines for both cold and heat stability and calculating additions to correct.
- Responsible for lab analysis and organoleptic analysis of wines throughout the production process to ensure quality and be able to identify problems and enact solutions.
- Monitoring of wines throughout the year to ensure they remain chemically and biologically stable.
- Facilitate ongoing and current research projects and grant proposals.
- Understand the challenges of using Indigenous yeasts and know how to overcome these challenges.
Qualification and Skills
- Bachelor’s degree in Winemaking and Viticulture
- Minimum of 3 years of full-time winery experience
- Ability to perform all lab analysis of wine
- Ability to operate and troubleshoot cellar equipment (filters, presses, pumps, bottling line, forklift, etc.)
- Create and execute cellar and laboratory work orders
- Knowledge of VQA regulations and Ontario winemaking requirements
- Hands-on experience with production equipment and cellar machinery
- Proficiency with Microsoft Office (Excel, Word)
- Excellent problem-solving and analytical skills
- Strong communication and ability to work in a team environment
Additional Requirements
- Work extended hours during harvest peak production periods (including evening/weekends)
- Ability to lift up to 25kg
- Work safely with production equipment
- Comfortable working at heights and in various cellar conditions
- Must have own vehicle
