Position: Head Sushi Chef
Wage: CAD $39.00/hour
Types: Full-time, Permanent (various shifts including evenings, weekends, and holidays)
Working hours: 30-40 hours/week
Advantages: 4% vacation pay

Job Duties:
Plan and direct the preparation and cooking of sushi and other Japanese dishes;
Supervise and coordinate the activities of kitchen staff;
Plan menus and create special recipes;
Ensure sushi dishes meet high standards of quality, presentation, and consistency;
Estimate seafood, rice and other food requirements and assist in controlling food costs;
Oversee the selection, inspection and proper handling of fish and seafood to ensure freshness and quality;
Oversee the preparation of sushi rice and ensure proper texture, temperature and seasoning;
Train and mentor junior sushi cooks and kitchen staff in sushi preparation techniques;




Maintain food safety, sanitation and hygiene standards in accordance with provincial regulations;
Prepare and present sushi and Japanese dishes, specialty dishes, chefs specials, and customized dishes for customers with food allergies or special dietary requirements.

Job Requirements:
Completion of secondary school is required
Minimum 5 years of experience in commercial food preparation, including two years in a supervisory capacity and experience as a chef, is required
Proficiency in fish filleting, including cleaning, boning, and slicing, is required
Skills demonstrations, including taste and plating abilities, may be required
