As a chef, you will be responsible forthe strategic management of the store in accordance with the company's policiesand vision, in close collaboration with the Supply and Production Manager.
Yourmain missions will be:
- Have the ability to demonstrate a completeunderstanding of the required menus
- Prepare meats, fishes, pastas, side dishes andgarnishes following recipes carefully
- Roast, fry, steam, grill, bake meats, fishes,vegetables as required by recipes
- Prepares food by cleaning, peeling, mincing,cutting, chopping, mixing portioning, measuring ingredients, packaging andlabelling
- Maintain proper food production records, ensureall equipment is operable
- Responsible for sanitation and post-serviceset-up
- Notify manager of any maintenance repairs need orunsafe conditions
- Taste and smell prepared food to determinequality and palatability
- Monitor temperature of hot and cold foods throughfood preparation and service to ensure that established temperature goalsare met prior to steam table transfer and maintained throughout mealService
- Studies recipes assigned by the Executive Chef,prepares and coordinates all meals
- Coordinates preparation for the following day’smenus
- Manage the prep list to plan duties
- Ensures standard of recipes to maintainconsistent quality
- Assists in the coordination and execution ofspecial menus for client presentations
- Ensure all kitchen equipment is in working orderand kept clean at all times
- Wear food safety equipment while on duty, usework safety equipment while on duty
- Maintain positive portion control and forecast ofproduction
- Practice proper grooming, personal hygiene, anduse safety equipment
- Communicate effectively with kitchen personnel& other unit departments
- Compliance with all company service standards,health & safety procedures, food safety requirements
- Perform other duties as assigned
