Hyderabad Cafe is seeking a skilled and reliable Line Cook with hands-on experience preparing authentic Indian curries and tandoor-style dishes. The ideal candidate has strong knowledge of North and South Indian cooking techniques, spice balancing, and tandoor operations, and thrives in a fast-paced, high-volume kitchen. This role is key to maintaining consistent quality and authentic flavor across our curry and tandoor menu items.

Responsibilities

- Prepare a variety of Indian curries (gravies, masalas, dal, and specialty dishes) following standardized recipes and portion guidelines
- Operate and maintain the tandoor oven — cooking naan, kebabs, tikkas, and other tandoor-based items to proper temperature and doneness
- Marinate meats, paneer, and vegetables using traditional spice blends and techniques
- Prepare base gravies, masala pastes, and spice mixes in advance for service
- Monitor food quality, taste, consistency, and presentation throughout service
- Coordinate with other kitchen staff to ensure timely order preparation during peak hours
- Maintain a clean, organized,



and protected cooking station in compliance with food safety standards
- Manage inventory of curry and tandoor ingredients; communicate stock needs to kitchen management
- Follow all HACCP/food handling and sanitation guidelines
- Assist with prep work, including chopping, marinating, and portioning, as needed

Qualifications

- Prior experience as a line cook, tandoor chef, or curry chef in an Indian restaurant
- Strong knowledge of Indian spices, regional flavors, and cooking methods
- Experience operating a tandoor oven safely and efficiently
- Ability to work in a fast-paced environment and handle high order volumes
- Team player with good communication and time-management skills
- Flexible availability, including evenings and weekends
- Food handler certification is an asset
