As a chef, you will be responsible forthe strategic management of the store in accordance with the company's policiesand vision, in close collaboration with the Supply and Production Manager.
Yourmain missions will be:
Have the ability to demonstrate a completeunderstanding of the required menus
Prepare meats, fishes, pastas, side dishes andgarnishes following recipes carefully
Roast, fry, steam, grill, bake meats, fishes,vegetables as required by recipes
Prepares food by cleaning, peeling, mincing,cutting, chopping, mixing portioning, measuring ingredients, packaging andlabelling
Maintain proper food production records, ensureall equipment is operable
Responsible for sanitation and post-serviceset-up
Notify manager of any maintenance repairs need orunsafe conditions
Taste and smell prepared food to determinequality and palatability
Monitor temperature of hot and cold foods throughfood preparation and service to ensure that established temperature goalsare met prior to steam table transfer and maintained throughout mealService
Studies recipes assigned by the Executive Chef,prepares and coordinates all meals
Coordinates preparation for the following day’smenus
Manage the prep list to plan duties
Ensures standard of recipes to maintainconsistent quality
Assists in the coordination and execution ofspecial menus for client presentations
Ensure all kitchen equipment is in working orderand kept clean at all times
Wear food safety equipment while on duty, usework safety equipment while on duty
Maintain valuable portion control and forecast ofproduction
Practice proper grooming, personal hygiene, anduse safety equipment
Communicate effectively with kitchen personnel& other unit departments
Compliance with all company service standards,health & safety procedures, food safety requirements
Perform other duties as assigned
